Type 2s: What have you eaten today?

Tried some strawberries last night for first time this year. Doesn't seem to have affected me too much - only had maybe 5/6 with crime fraiche but made a change from cheese for dessert

Tried melon for the first time since diagnosis, along with a tried and tested fish our. BG 4.7 2 hrs later. Very pleased
HI walnut_face I love melon too I have it every day my BG levels ok with it, it is good for you.
 
Sundays fare 29/5/16
B 1 slice of burgen bread / scrambled egg / a few pieces of yellow melon
L 4 small crackers / cheddar cheese / coconut and vanilla yogurt
D Homemade stew and Veg / cauliflower / coconut yogurt/ blueberries
 
Wild salmon, selection of seeds, straw a, rasps all for lunch.

I had two poached eggs on one slice of brown bread for breakfast.

Lunch was a picnic so I packed for myself hummus (one small tub from a stack of three) with a few Ryvita Thins (Multi seed) and some tomatoes.

Tea was a BBQ, so steak, feta cheese, tomatoes, advocado, and some strawberries for pudding.

B: Porridge and cream. L:. Salmon and cucumber sandwich on small granary slices of bread. D:Bacon, eggs, mushrooms and tom's. Several ground coffees and cream. 4 opal fruits. ! BGC tonight 7.8. 11 weeks into this so not too bad beats the diagnostic level of 21.3. Still work to do though!

Tuesday 31/5/16
B 2 poached eggs / 1 sml slice gluten free bread
L chicken breast pieces / mayo
S coconut / vanilla yogurt / raspberries
D pork chop / cauliflower and broccoli cheese bake.
 
Breakfast at 06.30hrs: 1/2 avocado and 1 boiled egg Glass water with fresh lemon and lime juice
teabreak at work at 10.40hrs
lunch at 13.30hrs

Salad shared between teabreak and lunch:

small piece of baked salmon, mayonnaise, boiled egg, 8 baby tomatoes, 4 garlic stuffed olives, hard boiled egg. Small amount of walnuts

Water bottle with frozen water, fresh lemon and lime juice throughout the day at work.
Out to Italian restaurant at 19.00hrs with family
avocado, mozzarella, tomato and basil starter
monkfish, scallop and king prawn cooked with white wine, garlic and samphire. Served with a mixed salad (declined sauted new tatties).
Declined the wonderful deserts too

1/2 small bottle of diet Pepsi and 2 small glasses of water
Double espresso with milk 'foam'.

Reading 2 hrs after that 6.5 thought it might be more. 5.8 before meal.

Fasting then as usual from 9pm till 9am
 
Yesterday I gambled with a curry, cooked from scratch, no jars of sauces. I added a sweet potato (V Large) Ingreients were Chicken, mushrooms, sweet pots, red pepper, onion, tin toms and various spices. BS after 110 mins was 6,8 so I pushed my luck a bit. Quite often my waking BS is higher than my after dinner. Not so this morning - 5.7
I will vary this recipe next time to reduce the carb content, If it works I will post the full recipe for others to try
 
B: nothin yet. In about 15 mins before my run, 10g Good Green Stuff, 25g, Clean Lean Protein, soluble vit C, 2 tablespoons of chia seeds, 800 ml,of water. But first a strong coffee with a big dollop of double cream

Hows the running going KP? Parkrun for me this morning
 
Good on ye. Just about to go out for my morning 1 mile. I am now running it at s out 9 mins mile pace but recovering within say 3 mins...so improving bit by bit. One day I may attain your dizzy heights...I'm just a little way off yet, but I've only been back running for a couple of weeks since cardiologist gave me permission and a week since finally being signed off.

That's great progress, don't rush it, apart from anything else the skeleton has a habit of complaining! Took me about 6 months to build up to 5k

Yesterday (Sunday)
Breakfast: Boiled egg and 1/2 avocado
Lunch (at work) small slice brie, 4 cherry tomatoes, 4 garlic stuffed olives. Small handful walnut pieces

Tea: 4pm Visit to water Buffalo farm for Open Farm Sunday so had a buffalo burger, brie, onions and mayonnaise

Nothing else to eat for the day

Today: Monday
Breakfast, the usual boiled egg and 1/2 avocado
Lunch (at work) usual as above
Tea: 1 buffalo sausage, lots of veg

Pudding Meringue made with xylitol 'sugar' not cooked yet, so hoping they turn out ok!
 
Greek Yogurt - Breakfast
Cheese Salad - Lunch
Chicken Curry with Cauliflower rice -- 1st time of trying this so hoping it will turn out to be something I will happily eat.

Need to find some alternatives to the usual as worried I won't be able to maintain it otherwise but I am a 'fussy' eater so I have to take it one thing at a time and a lot of things I do not eat.
