Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti con sugo di melanzana made with aubergines, celery, carrot and onion, passata, garlic, rosemary, butter and spiralised courgettes, finished with Parmesan.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes and mustard cress with a dollop of home-made aioli for dipping, topped with parsley and toasted almonds.
Water to swallow tablets.

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, lemon verbena, salad onions and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.

Four squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, cucumber, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.

Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, onions, leeks, red and yellow sweet peppers with garlic chestnut mushrooms.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Four squares, Montezuma's Absolute Black 100% chocolate.

S: Tea with a dash of milk (gave me something to do with my hands while OH tucked into refreshments, none of which were diabetic-friendly).

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.

S: Confronted with a cold buffet. Obviously, some folk had worked hard to produce this spread. Alas, the foods on offer would have been very bad indeed for diabetics and I ended up with slices of tomato and rainbow chard with a large mug of black filter coffee.
Still, we went along for the good company and convivial conversation, not the grub!

D: Seafood salad using king prawns, brown shrimps, lettuce, baby plum tomatoes, chicory, Romano peppers, Halkidiki olives, mint and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pumpkin seeds.

Anyway, not having knowingly had it before, I fried some streaky bacon until crispy. In the bacon fat that was left, I scrambled three eggs. I followed that with a couple of squares of 85% dark chocolate. It was very nice.

Not quite sure what to have for tea, but I may do a sirloin steak with button mushrooms and cauliflower & broccoli.

I haven't eaten meat since I was 18 years old, but that sounds like a tasty way to cook eggs!

I weigh approx 46 kg . Type 2 - Metformin plus 1 x 15units Levimir in a pen. 2 1/4yrs since diagnosis . Unsure of management.
8.6 100ml cranberry juice plus water. 1 egg 3 rashers of low fat bacon, 1 slice of luvlife seeded bread with proactive (PA) spread & tspn of peanut butter 13.4 3 slices of home cooked turkey, dahl (jamie oliver) cabbage , a few slices of carrot, a plain brownie with forest fruits and squirt of cream
5.6 Cheese roll (like sausage roll) knob of cheese , lettuce, cucumber , 3 cherry toms, 1 x luvlife & (PA), Keto bar plus small unripe peach
