Evening all,

Yesterday, Twelth Night

B: Two poached eggs topped with a knob of butter, avocado, with a good grinding of black pepper and a wedge of Teifi.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast.
Chicory, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds and hazelnuts.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions and Romano peppers, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.

I sipped a pleasant dry white wine and there were some interesting canapés.
The celery bites with goat's cheese and chives were tasty and a chicory boat with blue cheese, apple and two or three cranberries went down a treat!

Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans smothered with butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.
 
I have - possibly - over done it for the past 3 or 4 days, but in my own defence ..............

OK, yesterday

B - 10.00am - 3 toasted crumpets (as seen on TV) with substantial buttering with black filter coffee .... I am aware that crumpets are rather a no-no for me.

mid afternoon-ish - large handful of mixed nuts

D - 6.30pm - appero G&T, then blue cheese and walnut salad, followed by sirloin marinated in mustard (French) and ground pepper + celery and fennel salad, 3 glasses red wine followed by lemon tart and thick cream

Water to swallow tablet.
Espresso.

L: Aperitif: dry white port.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, cauliflower, leeks and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
 
Evening all

Yesterday, I nipped out to the garden to harvest the last of the mint. It stopped growing weeks ago, as might be expected, but I managed to eek it out for Christmas and the New Year. From now until Spring I shall rely heavily on thyme, sage and rosemary, plus the newly-acquired lemon verbena which was still in a pot, so could be brought into the greenhouse. We'll see how that fares.

Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, lettuce, apple peel, celery, baby plum tomatoes, last of the mint and Romano peppers dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.

Shirataki noodles, mushrooms and pak choi with low salt soy sauce
Evening @tobythekid123. Welcome to this thread for type 2 foodies.

Are these shirataki noodles nicer than konjac noodles? I tried cooking with konjac pasta and found the texture rather rubbery, although acceptable simmered in our favourite Italian sauces, all of which have loads of flavour.

Recently, I've been using courgetti (spiralised courgettes) as a low carb substitute for pasta. Courgettes are in short supply this Winter, so I'm looking for a low carb alternative.
