Type 2s: What have you eaten today?

Evening everybody

Yesterday, Valentine's Day

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry red wine.
Walnut and mushroom nut roast made with onions, eggs and flax 'egg', (strictly no breadcrumbs or flour), garlic, vegetable stock and rosemary.
Roasted Brussels sprouts with lemon zest and parmesan cheese.
Carrots cut on the diagonal, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, oregano and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.

All foods I can just swallow.
Hello @cdpm. I'm afraid pasta of any kind sends my blood glucose through the roof, but type 2 diabetes is a very individual disorder and we're all different.

I'm fond of Italian pasta dishes and have adapted some recipes by using spiralised courgettes (otherwise known as zucchini), one per person, instead of spaghetti. It works well with sauces made from canned tomatoes or passata.

Yesterday, we celebrated Valentine's Day (a day late due bad clash with medical procedures) with a slap-up lunch at a favourite eatery.

B: Two poached eggs topped with butter, avocado and three crevettes all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: gin on the rocks with a slice of lemon.
Goat's cheese served with pear poached in red wine, walnut halves, lamb's lettuce, tomato, basil, cucumber and rocket dressed with vinaigrette.
Monkfish alla Parmigiana.
Spinach with garlic and butter, deep fried zucchini matchsticks.
Steamed carrot batons, broccoli and French beans.
Water to drink.
Skipped pud.
Espresso
Brandy on the house.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, lemon verbena and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to swallow tablet.
 
Coffee with cream and sweetener.

(I decided that the intolerance reaction is OK because it's the opposite effect to the meds. side effects so maybe they will counteract each other hopefully anyway)
But just sometimes as it's not really pleasant either way. I don't really wanna detail exactly what I'm referring to as this is a food thread.

Hi @cdpm. Perfectly understandable. Intestinal distress of any kind is sometimes unpleasant.
I do hope your experiment with the meatballs works for you.

Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast.
Celery sticks and baby plum tomatoes with chicory boats for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds and hazelnuts.
Water to drink.
Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions, Halkidiki olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with pecan halves.
Water to swallow tablets.
 
Evening all

Yesterday:

B: Two poached eggs and scallops, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and sage, baked with sweet red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout with a knob of butter and toasted pine nuts.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, quail's eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
