Type 2s: What have you eaten today?

Homemade beet and potato soup. With 4 beets, 2 potatoes, 1 onion, 1 tablespoon each of black pepper and garlic powder, 2 chicken bouillon cubes, 5 cups of water.
It was not very good!!!
I bet it was a striking colour! @cdpm. Sorry to hear the flavour didn't meet with your expectations. If there's some left over, you might want to stir in a swirl of yoghurt.

Tuesday:

B: Two poached eggs with a knob of butter and avocado seasoned with a good grinding of black pepper.
A wedge of Beenleigh Blue ewe's milk cheese.
Water to swallow tablet.
Espresso.

L: Salad using salmon fillets poached with black peppercorns, whole salad onions and lemon juice., then refrigerated.
Combined with rocket, avocado, garden tomatoes, celery and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almonds.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns, mussels, lettuce, celery, Romano peppers, Welsh onions, Kalamata olives and mustard cress, with a dollop of home-made aioli for dipping, topped with toasted pumpkin seeds.
Water to wash down tablets.

Wednesday:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Roasted cauliflower 'tabbouleh' using goat's cheese, salad onions, garden tomatoes, flaked almonds, flat-leaf parsley, mint, olive oil, lemon zest and seasonings, topped with toasted pistachios.
Salad made with cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.

D: Seafood salad made with crab and king prawns, lamb's lettuce, Romano peppers, celery, mung bean sprouts and salad onions, with a dollop of home-made aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.

of black pepper.
Water to swallow tablet.

L: Crustless quiche using calabrese, red peppers, onions, eggs, double cream and parmesan cheese.
Salad made with watercress, sweet cicely, garden tomatoes, radishes, salad onions and Kalamata olives, topped with toasted pistachios and dressed with an olive oil, garlic, mint and balsamic vinaigrette.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lamb's lettuce, celery, Romano peppers, salad onions and mustard cress, with a dollop of home-made aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.

L: Packed lunch made with leftover cauliflower tabbouleh.
Little gem lettuce cups, Romano peppers, celery sticks and garden tomatoes with a dollop of home-made mayonnaise.
Almonds and hazelnuts.
Wild blackberries picked on the hoof to round off lunch.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with sweet cicely, mung bean sprouts, vine tomatoes and mustard cress, dressed with olive oil, flat-leaf parsley and a touch of lemon juice, topped with toasted pine nuts.
Water to wash down tablets.
 
I suppose that counts as an eating day then @cdpm.

I was doing adf. That's why I somehow forgot if it's an eating day!! Plus I'm getting older !!
Today will be canned vegetable soup with pizza slices cup up and thrown in to get soggy.

None of us is getting any younger @cdpm that's for sure.
Might be an idea to restart your food diary, rather than rely on your memory.

Saturday:

B: Two poached eggs and two scallops with chopped, flat-leaf parsley, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and sage, baked with sweet red peppers and aubergines, moistened with double cream and topped with grated, extra mature Cheddar cheese.
Steamed runner beans smothered with butter.
Salad using lamb's lettuce, Romano peppers, Welsh onions, vine tomatoes, mint and Kalamata olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with roasted macadamia nuts.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with tiger prawns and mussels, avocado, cucumber, baby plum tomatoes, salad onions and Nocellara olives with home-made aioli for dipping and topped with toasted pumpkin seeds.
Water to wash down tablets.
 
Rather than rely on my memory @cdpm, I've found keeping a record of the food eaten each day along with my
blood glucose readings is helpful.
I just do a food diary here for fun.
And I rarely do bg readings as I have no control over them anyway so it's only distressing to see the numbers.
(Sorry for the non food post but I can't ignore questions asked of me).

Lunch: I pre-cook vegetables so I can load my plate. Today was a new try, smoked salmon and lettuce on an English Muffin*, cauliflower, cherry tomatoes
*May have been too carb heavy.
