I wonder if you perhaps slightly mire than parboil them and drain well before cooking? I'm actually far better with the carvery roasties which have obvs been deep fat roasted (and therefore absolutely delicious) cos the cooking oils have seeped well into the spuds mmmmmm dunno abt coconut roasties thotastewise that is....
Yeah, coconut flavour roast potatoes doesn't sound right at all. I roast ours in butter and (cold pressed) rapeseed oil.
