Im only in my first month, but the results are encouraging. I have my glucose readings back down to single figures.

Any tempeh eaters out there? It looks scary and I dunno what to do with it lol
At present I'm vegetarian but have spent a chunk of my life vegan. Unfortunately, because of another medical condition (hyperuricemia) I'm advised to restrict eating all the beans and pulses and recently stopped eating any beans, using soya milk, tofu and tempeh - all of which I love! It's this or medication which I've had before and had dire experiences with various side effects. can't win?What are you eating? Hi fellow veganHi I have followed a vegan diet for a very very long time. Although I don't do keto I try to follow lower carbs healthy fats eating way of life. I get a lot of my recipes from Heavenly Fan on utube as she does keto vegan. The sesame rolls are absolutely amazing. I have tried tempeh and seitan, usually in stir fries, but they are not to my liking.

Typical meals for me are scrambled tofu, stir fries, good salads, crustless quiche made with tofu, i make my own seitan deli meat for sandwiches, curries with cauli rice, pasta sauces with cougette noodles.What are you eating? Im already a huge tofu fan and eat it a lotI love tempeh and tofu. Tempeh has a more meatier texture and usually more flavor to it. Plus you can find it made from various grains too which changes the flavor some. Lightlife has bacon flavored tempeh strips that are delicious! The thing to remember is while it has some flavor, you make it better by what you put with it??? But try a spray of aminos or soy sauce over it and add some chives(green onion) and maybe some parsley and it's delicious. But I put it with my veggie bowls all the time. I usually am adding lemon or aminos, nutritional yeast or gravy to them. Garlic, ginger etc. It also holds up well in stir fries or stews.
Tofu is very versatile. But it has very little flavor until you either marinate it or what flavors you put on it. But you can stir fry, marinate it, saute it and add it on salads. You can buy it flavored already too. A pudding that is wonderful is blend soft tofu and add lemon and a sweetener and it makes a pudding that is delicious. Blend soft tofu with 1 bag of melted chocolate chips for chocolate pudding!! The chocolate chips can be melted in a microwave for about 5 minutes. Don't overcook them. It might look like they aren't melted but take a spoon to them and they are?? It can vary how long though per chip brand and microwave.
@LinsT Yep, You can treat it like tofu or seitan. Just slightly chewier, slight flavor difference. It can come flavored, but that goes for tofu, seitan or tempeh. I haven't made my own seitan deli slices. I've thought about trying that. I've been a little lazy as I like a few of the vegan deli slices out there. But I make my own seitan "steaks" a lot. What is your favorite Deli Slice recipe?
I love Sam Turnbull - I have her Craving Vegan book and use her website a lot for recipes / inspo.@LinsT Thank You! I found his site! Some of it looks really good! You might be interested in It Doesn't Taste Like Chicken by Sam Turnball recipes for turkey and bologna deli slices. I have never tried a recipe of hers I haven't liked. I use her Seitan steak recipe. She also has a nice chicken seitan recipe.
