Vegetarians: What have you eaten today?

when you said you soacked for ages how long? I find I need to do them for 12-14 hrs I put them in a jar with water. I dont have a fancy mixer
I usually soak them overnight. My blender packed up at the weekend making a (non diabetic friendly) tiramisu made from creamed cashews. It had yogurt in it which helped with the blending and it came out lovely and smooth just as the blender's motor started to smell funny and stopped working.

B: flax, pumpkin and sesame seeds, slivered almonds, walnuts, brazil nuts mixed with spoonful of full fat yogurt
L: Lidl protein roll with cream cheese and proper welsh caerphilly (must stop visiting cheese fayres ;))
D: vegetable omelette, square of 85% dark chocolate
 
B: mixed berries, soya yoghurt, flaked almonds, cinnamon
L: half Lidl roll with red pesto
D: mushroom soup with other half of Lidl roll, some peanuts

L: houmous with slices of cucumber
D: huge smoked mushrooms, Linda Mac sausages, green beans. 85% choc.

Breakfast - Grape Fruit with a dusting of Sugar

Dinner - GF Tofu Scrambled Fried Rice
Snacks - not as yet
 
Yesterday

Brunch: fried smoked mushrooms
Dinner: roasted Mediterranean veg, romesco sauce, tofu wiener, celeriac chips, wine

The romesco sauce was new to me :hungry: Will pop the recipe on the vegan thread. It was a bit lumpy as it was made in my tiny mini blender. Lumpy sauces will be a thing of the past when my new food processor arrives next week :jimlad:
 
yesterdays:
B: mixed seeds, ground flaxseeds, full fat yogurt
L: cucumber, port salut cheese, few mixed nuts
D: (more gossiping than eating) low carb options from salad bar, scooped out the cauliflower cheese from a pastry shell and double helping of green beans (swapped fries for green beans)

ya its been a while - the app kept logging me out when I tried to post and not have much extra time to get to the forums on my main comp as it doesn't like my laptop (take forever to load). Hope this are going well for you!

L: roasted vegetables (aubergine, courgette, pepper, leek, 2 cherry tomatoes) grilled halloumi, square of 85% dark chocolate
D: raw green pepper, single Gloucestershire cheese and gouda cheese, few mixed nuts

Brunch: toasted Lidl roll with cashew butter
Dinner: leftover roast veg, tofu wiener and romesco sauce. No celeriac chips left from yesterday obviously! :rolleyes:

L: 2x new mini potatoes, bell pepper, cucumber, 1/4 avocado, fresh herbs red onion and tomato
S: peanut butter shot
D: cauliflower rice with home made chilli and a dollop of tuffuti cream cheese it was yum. I did a bit of batch booking yesterday to et me through he week. the chilli tasted so good and I cant remember what I put in it- typical.

What is a peanut butter shot? It has the words peanut and butter in it so I will probably like it!
