Vegetarians: What have you eaten today?

Nothing fancy:

B: Muesli (Tescos no added sugar) with skimmed milk, also aYakult light.
L: Two cross buns with olive spread (high in carbs, but tasty treat!)
D: Wholewheat spaghetti bolognese (made with green lentils)
 
Nothing fancy yesterday myself!

B: mixed berries, soya yogurt, walnuts, ginger
L: 2 Livelife toasts with cashew butter
D: courgetti in red pesto with mushrooms, pepper and flaked almonds. Peanuts
 
What is a peanut butter shot? It has the words peanut and butter in it so I will probably like it!
sorry for the delay I seem to be only able to get to the forums at the weekends - there is a all natural nut butter company called pics and they just brought out individual packs see picture, it comes wiht a mini bulldog clip so you can save for later. Handy to have in my bag. You could get a company to do it you way or just decant peanut butter inot small pots this is 30g suggested serving size is 15g

You called it a "shot" and the maker calls it a "slug". I know which sounds more appetising :hilarious:

That is a great idea. I have not seen such a thing over here. I guess we may have at last found a use for empty testing strip pots!
 
Yesterday

L: red pepper houmous, cucumber slices, Brazil nuts
Felt rotten in the evening - hot and cold at the same time, so just had peanut butter on Lidl roll toast and lots of tea for dinner.
 
B: flaked almonds, sesame seeds, pumpkins seeds, spoonful of full fat yogurt
L: cucumber, olives, spoonful of hummus, cube of extra mature cheddar
D: griddled haloumi and mushrooms with broccoli

will have a square of 90% dark chocolate later
 
B cheese on toast
L crackers cheese
D was yummmmm fresh green salad with a curried stuffed mushrooms ...
The big mushrooms were stuffed with a corse chopped onion, mushroom, courgette, carrot & red pepper .. this mix veg was fried off with a stock cube and curry powder and a splash of vegetarian beer... when softish a big spoon of full fat yogurt was added to the chopped veg to make a sauce .. this was then piled onto the big flat mushrooms and put in the hot oven for a good half hour ... it was lovely the oil and vinegar dressing for the salad has a little curry kick as well.

B: green smoothies, + scrambled egg and tomato
L: at the in-laws olives, cherry toms, sheep cheese. 1 slice sourdough bread, very ver thin slice of hm coconut cake
D: 2 x tufu sausages, broccoli in lemon and garlic mixed green salad with a dash of olive oil and lemon juice
 
Yesterday

Brunch: Lidl roll with red pepper houmous and two Linda Mac sausages
Dinner: chickpea curry, curried mushrooms, spicy yogurt, poppadoms

The curried mushrooms recipe was from the new book. Quite mild, but that was good as the chickpea curry is very hot. I would make it again.
 
Brunch: cold leftover curry
Dinner: veg and black bean stew, Lidl roll garlic bread
Pudding: creamed cashew and raspberry pot

Tested dinner and was really chuffed

I also had a load of Bach rescue remedy and weird intravenous contrast dye stuff due to a ct scan this morning so having a day off from testing. The pizza-pizza filets were surprisingly tasty and low carb. Got them from Waitrose https://taifun-tofu.de/en/tofu-filets-pizza-pizza

L: cheese omelette
D: homemade soup creamy celery, broccoli and spinach (with loads of garlic)


Had kids home sick this week and they have kindly passed germs on so needed soup today :(

Another vegetarian joining in. Low carbs and high-ish fat seems to be working.

Today's been a bit different as I wanted a Hot Cross Bun after the Good Friday Service! So moved things round a bit.

B. Natural Greek Yogurt and satsuma
Early L. Omelette with mushrooms, leeks and green pepper.
Hot Cross Bun.
Supper. Carrot soup.
