Breakfast is still the carbiest meal as I usually have some porridge and a coffee (it's about 26g). I don't usually test at 2hrs after this, but when I have it's been fine. I find my morning swim is difficult if I try just having the coffee.
Lunch is settling in to a pattern of a salad (Rocket, Cress, Spinach) with Silverskin Onions, cherry toms if I have them and then either meatballs, sausage or some fish (Mackerel today) on top. I bought some tiny tupperware pots and these have peanuts, greek Yog or 3-4 prunes. By filling small pots you don't take too much.
My evening meal was difficult because I'm very susceptible to carbs by then - probably because my long acting insulin has worn off. So I've been avoiding all potato, rice, pasta and bread.
Last night was low carb sausages with roasted Celeriac and green beans followed by a bit more greek yoghurt and some cranberries.
I heard someone on another thread describe us low-carbers as some sort of nuts and seeds freaks (or similar), but I love this diet.
