what do you have for lunch

rude d/n nurses and being treated like im wierd because im diabetic
wve any ideas on lunches to fill up im bit stumped here, and what carb intake should I be on per day or meal . sorry to ask ive not been told yet thanku
 
Not the easiest question to answer without knowing your situation, existing BG levels, how you react to different foods etc. If you don't yet know, lunch is a good time to begin your learning process.

I got myself a meter and knew that sugary foods were off the menu. What I learned after getting a meter was that things like white bread were just as bad as sugary foods. I could however, eat pumpernickel and tortilla wraps seemed to be OK too, along with things like ryvita.

Any of these things go well with tinned fish like mackerel (in a spicy tomato sauce) or tuna, with mixed salad. Tuna chunks with tomato, cripsy lettuce, cucumber, spring onions, radishes etc in a tortilla wrap make a nice lunch. Sometimes I will have an olive and feta cheese salad with just a drizzle of balsamico. If I want something more hearty, pumpernickel with sliced cheese and meats, say pepper salami or smoked ham plus a tomato and red onion salad. I also like herrings in various ways, the rollmop herring being easy to serve up. Occasionally a boiled egg goes with the salad and sometimes it is a pickled boiled egg. Pickled onions and gerkhins are too, favourites.

As my control improved, I started to eat rye bread, but proper rye bread from trusted sources. Much so called ryebread has only a little rye and a lot of white flour. I later learned that I could tolerate wholegrain spelt, an early historical variety of wheat. Such breads are heavy because they don't rise well. Anything which is light and fluffy probably has a lot of highly refined flour. I have to eat the bricks but I do like them. Not everyone does. They are also great if you have a stew or heavy soup.

Test how you react to foods which have complex carbs. Eat just a little to begin with and see how you get on. If something spikes you too much, leave it for a few weeks but, as your BG levels improve, for it takes time to do so, come back and give it another go.
 
Mine depends entirely on what I'm doing, and what's available.

Today I've nipped home, so it's a bit of left over chili, mixture of quorn and mince, with mushrooms.

Other days can be a shop bought sandwich, usually the lowest carb on offer, and normally brown bread.

Or fruit, bad days are a meat pie or sausage roll.
Although yesterday was two sausage from the Tesco café, with a cup of coffee.

But that's on fairly labour intensive jobs, so I tend to be getting exercise at the same time.

But I eat the beat I can manage at the time.
 
Many thanks Yorksman - I am new LADA and was running out of ideas. Bread in any form and potatoes seem to be anathema for me at the moment and my BG sky high so I am trying to have meals without either., difficult until I get used to it.

thankyou all so much the ideas are great and I will be trying them , I havnt been to see a diabetic nurse for my intro just the gp yesterday , so ive ordered myself a glucose tester and will start the process myself. the only thing im feeling is bit hungry between waiting to get tea/etc . and feeling little light headed today I had 2 slices burgon bread tuna/corn teaspoon mayo . natural youg /mixed fruit. im hoping the wieight will start to drop soon and heaven knows I have a lot .. lol thanks again your such lovley people ; xxx
 
i find a good snack is cheese wrapped in ham. My fav is Edam with Brunswick ham, 0 carbs.
 
sounds nice that will be on my snack list soon xx only so many bloody nuts u can eat lol

Pearl barley and qunioa are worth testing. You can use the pearl barley as a rice substitute and the quinoa as a sort of pasta substitute. They are both low GI if you can tolerate that. They soak up the sauces at least :-)

Ham and cheese rolled around a whole pickled jalapino pepper. :shock:
 
i was wondering about rice sub and I will try the pearl barley that's of great help thankyou
but s fo the jalapeno eww nono no hahha to hot for me
 
what sort of sauces do anyone use ? :thumbup:
 
ones I make myself so I know whats in it. normally use meat juices and or standard cream (lactofree)/ Butter/ garlic or tomato and chilli
 
will have to try that a mealtimes dull without something. soooo many questions I know hah sorry x
 
super tasty carb free meal (add carbs if you so wish) Chicken breast, cut up, pan fryed with onion, add butter and garlic and cream. (I had garlic butter in the freezer ready made).

stir fry some greens and brocoli and throw the chicken on top to serve :)

I am going to make this this evening with some carrots and broccoli for tomorrows lunch in work

I personally believe that it is best to find out what you can eat rather than to stick to "so many carbs a day" as different carbs can affect us all differently and even how you eat them and with what can also have a big effect.

You might find that you can eat a sandwich made from burgen bread or as I do now from a thinly sliced small wholegrain loaf, if I have ham or tuna my bg levels rise slightly higher than if I add cheese or just have cheese on its own as the fat slows down digestion and the carbs in the bread enter the blood stream slowly over a longer period of time rather than all at once so I can eat more carbs if I eat them with fat, a similar thing occurs if I add vinegar as a dressing that also slows down how the carbs enter my blood stream.

I found that reading about Glycemic Index (GI) and Glycemic load (GL) to be a big help in my gaining good control, theres lots of info on line :D

Basically by mixing high GI foods with low GI Foods and using portion control depending on the GL of a meal I can eat pretty much what I like as long as I get the portions right. There are one or two exceptions such as white bread and pasta that I still generally avoid but we are all different and some of the things I cant handle very well others can so its a personal thing :D
