"What have you eaten" Parallel Chat

Nothing you've said. It's been quiet for several months now. But I'm finding the main threads quiet too. Such a shame. This forum was my life saver and main support tribe for over 5 years.

Ah let's hope it's just a phase with everyone being a bit busy. I'll try to stick around! I do tend to just fall off the face of the earth sometimes with social media but I really do need the inspiration to do better with managing my diabetes so this forum is extra important.

Have you shared the date of your birthday? If not, I'm wishing you a happy birthday now! :happy:
 
I'm hoping it's just a summer holidays thing but agree it does seem quieter overall. Also agree how much the forum has been such a support and for me heading on for 8 years - where did that time go? Without that support I doubt very much that I'd still be in remission 8 years on.

@jpscloud good to see you back and definitely not to do with you - although you've been missed. Currently I'm mainly posting on the main low carb food thread as a bit time poor just now. Summer is often busy but this one is busier than normal with a lot of family zero celebrations -_including our 50th Golden Wedding anniversary just a few weeks ago and my 70th birthday coming up next week. We are away this coming weekend celebrating my birthday in Wales with our youngest who now lives there and is taking us out for a special meal on Saturday and we are planning a wild swim on Sunday, in a nearby to their home Welsh lake, plus a Sauna. Also planning a lunch party out locally with friends on the actual day.

@Annb notice you also have an August zero birthday and hope you have a few enjoyable times planned.

Thanks @shelley262, it's a relief to hear I haven't killed the thread! 8 years in remission is a fantastic achievement, and just the inspiration I need at the moment.

Thank you for taking the time to post, and I hope all your celebrations are wonderful! I love Wales. Happy birthday in advance for next week, just in case I get caught up in something and forget! :happy:
 
Well I picked the beans but didn't have them for tea, nor did I have the egg salad! I had some full fat cottage cheese with chopped onion and chili, and a small baked potato.
 
We went to new-to-us garden centre today and found their cafe was very pleasantly situated with a large veranda and stunning views.
I had a 3 cheese ploughman's, left the bread. Bought some stilton and cheese home
Bought 3 shrubs

Mid afternoon, 2 big handfuls almonds

D: one chicken thigh, Cole slaw, stilton and 4 olives. Ff greek yoghurt..

Yesterday helping at older persons cream tea. Ate nothing there, went full of (can't remember, probably cheese)
Dinner was chicken thigh with salad

Main plan is just to see my 80th in a few days time. Enjoy your 70th with your family and friends.

The forum is quiet all over. I am hoping it's just that most members are doing summer things, not a lack of interest. I've appreciated the support I've found on here as well but recently I've felt that I'm almost talking to myself.

Just had breakfast of 2 eggs scrambled with some cottage cheese stirred in.

2nd meal will be more of the butter chicken - there's plenty left.

Must go and take my pills and get ready to go out. It's leg bandaging day. Our car had to go to the garage for work on the suspension early this morning, so Neil has borrowed Alistair's car to get me to town. Hope the wheelchair will fit into the boot.

EDIT: Neil had to lay the back seats down in the Dacia to get the wheelchair in but we got there and back. Neither of us like the Dacia very much. It's made by Renault - a cheaper version - and it shows! We're spoiled with our old Scenic. We do realise that and that is why it is so important to keep it going despite its ancient status (2005).

Breakfast was 2 eggs with 1 small slice of bread, coffee and a nectarine

Lunch was some not low carb stuff, but limited amount

Dinner was a chicken breast, runner beans from the garden and two small new potatoes with a little bit of instant gravy.

I'm still feeling peckish but I don't want to overdo it - I'm trying hard to keep myself from overeating.
 
I'm just wondering if the newish lentil crackers I have been eating recently instead of RyVita (which was my "go to" carb content) have had an effect on my inner workings. I have been eating it for the last 3 or so weeks (it is low carb and low cal) and it is during this time that my insides have been sore and over-active. So I will stop eating the crackers for a while and see if things improve. In fact, I didn't have any in the last 2 days and I am already feeling a bit better. Haven't had any RyVita either - giving my system a break from the fibre content. Many years ago, I asked a GP about similar issues and she laughed at me "you're eating RyVita," she said. "What else do you expect?" I hadn't made the link myself and I did stop eating it for a while, replacing it with home made wholemeal bread but since trying to go low carb, I've gone back to the RyVita. May be a mistake.

On the other hand, any kind of bread will not be an option. Then again, I do know that too many veg also cause problems (fibre, I imagine). I have tried chilled defrosted bread and chilled defrosted potato as well as oats chilled overnight in the fridge. The resistant starch idea doesn't work for me. Oh dear ...

Not much energy for posting or even lurking right now I'm afraid. Vicious cycle of doing too much, not getting enough rest, not eating enough, not having enough energy and not getting the help I asked for and was assured I'd get.

Two medical appointments in the same week was a bad idea but hubby insisted I keep the second one as scheduled to free up August for a trip Up North. At least I can be reassured by a surprise retinopathy screening result of zero in both eyes. Since then I've been desperately trying to keep my head above water and feel like I'm not coping. It's taken nearly 6 weeks to manage the usually fortnightly online grocery order, I don't have the energy but we've run out of cheese so I had to push through. Once there's more food I can eat perhaps things will improve energy wise.

It's not all bad, even if it feels overwhelming. The Blue Badge I applied for months ago has finally been sent to the printers and will hopefully arrive before we go on our travels, it'll make things so much easier and slightly cheaper.

So far today I've managed to eat one bite of cooked turkey, it was too dry for me to swallow on its own and I've not had a chance to dig out some mayonnaise as I had to meet the online order deadline. I have enough food to keep me going if I can only manage to lie down for half an hour until I feel relaxed enough to eat.

Today's food (fingers crossed)

Cooked turkey with mayonnaise

Fishy salad (tinned tuna & mackerel with olives and crunchy raw veg)

Either chicken & bacon mayonnaise with lettuce or sliced beef (the other one will be saved to eat first thing tomorrow)

Peppers stuffed with soft cheese

Hugs to anyone else who's struggling at the moment. Here's a bit of light relief - found this plush bladder which accurately represents the attitude of my own irritable organ!

I find since I've gone low carb I'm getting less and less tolerant of certain things, seed oils especially. For example a little bit of shop bought mayo was fine, but now I can't stand the taste, turns out they are all now rapeseed oil. If not oil it may be one of the other ingredients. These things are highly processed, no matter how "healthy" they are labelled.
I've checked and there are no oils used in the production of the crackers - just lentils, pea flour, chickpea flour and sea salt. It has to be the pulses that are causing the problem - if it is the crackers at all. (Gut feeling a whole lot more stable after 3 days without crackers or RyVita.)

I do watch out for oils used in food products. I don't buy much ready made food anyway but I can't buy anything that includes Rapeseed or Palm oil - I don't think I have a problem with either, but I know Neil has so I just don't buy them in case of accidents. Same for Sesame seeds or oil - DIL goes into anaphylaxis with the slightest exposure. Safer not to have them in the house. Fats used here are only butter and olive oil and Neil buys a vegan spread made from soya oil, which is getting more and more difficult to source. Neil has to be vegan because he is seriously allergic to animal proteins (except, strangely, when his crohn's is bad - then he can and does eat tinned mackerel as a medical treatment).

Breakfast was the last of the butter chicken with a dollop of ff Greek yoghurt.

2nd meal will be a salad of some sort in a box. I have been invited to go to a friend's house but another friend (Indian) wants to prepare an Indian meal for everyone. Pretty sure there will be nothing that I can eat, so will take my own and just hope she's not offended.

Great news on the retinopathy results, and I needed 3 or more emojis to react to your post, I'll forever now be seeing this bladder plushie's face every time my bladder acts up!
 
I've tweaked my back a little - it's not as bad as it can get, at least not yet. Sometimes it develops over a week or two. I think it's a nerve thing, but it has also crossed my mind that it could be referred gall bladder pain from passing sludge or stones but I haven't had that checked out yet. And it's also raining, so the gentler gardening jobs I wanted to do are postponed for the morning.

I fancied a salad for brunch so I had iceberg lettuce with corned beef, cottage cheese, an egg, grated carrot, a medium potato with some mayonnaise and home grown celery leaf (chinese celery). I love the taste of celery but find it quite hard work chewing through the stems, and the celery leaf is a great celery flavour without developing cheek muscles to rival a hamster.

Corned beef sandwiches are a huge favourite of mine but the iceberg lettuce makes a good substitute for bread as long as I'm not in carb meltdown and then it probably wouldn't be sandwiches I'd go for anyway!

@debs248 I should also have said I hope things improve sleep and energy wise, not getting enough good rest is really tough.

I also like removing the stalks from half a dozen mushrooms and filling the cups with a smear of mustard, a squeeze of mayo and a spoonful of corned beef.

I'd been planning to experiment with eating a small bit of protein/ fat soon after waking to see if I could switch off my liver's ridiculously generous glucose production. BG was 11.3 and will probably stay up near there until I can bring myself to eat something.

As well as the sliced beef and stuffed peppers not eaten yesterday, I'm planning to have some mozzarella, a tomato and some roast pork today.

Ohhh, corned beef, haven’t had that for a while. A useful reminder to me. I like it sliced and heated in a skillet with mushrooms and peppers then topped with a poached egg. That might just be tomorrows breakfast.
 
I really like corned beef and have tried to make it at home, but it never tastes as good as the stuff in tins. I haven't bought any in ages though because it is one of those processed foods that I try to avoid. However, it really appeals at the moment.

I think it's not too bad as far as processing goes, some of the higher-end ones are zero sugar and only list salt and sodium nitrite (which I understand is enough to put some people off) as other ingredients.
 
I'm making a crustless quiche with cheese, onion and French and runner beans from the garden for brunch. I just peeked and it looks like the air fryer is doing a really good job.

Dinner last night was some very unhealthy ramen because my back was hurting a bit too much to prepare anything. It's not so bad this morning so hopefully it will go away soon.
