What have you eaten today? (Low carb forum)

B: Buttery scrambled eggs
L: Grilled hot dog w/ ketchup and mayo, cheese and olives
D: Prawn and veggie stir fry with peanut sauce, served with shirataki noodles
 
I just tried it. It's great. Really filling and tasty.

I've logged the recipe into MFP and, for anyone who's counting, it's 317 calories, 15g protein, 24g fat and 8g carbs. That might be a little high - I shall have to check my BG a little later

Oh, I'm glad you enjoyed it! I agree, it's very filling (and tasty!). It is a little higher carb than I'd usually have for breakfast, but I only experienced a slight rise in BG (preprandial 4.8, 1 hour postprandial 5.2, 2 hour postprandial 4.7), so I'm okay with it.
 
I did spike a bit. 5.2 before then 6.2 at 3 hours postprandial. Not enough to worry about but I won't overdo these little treats.
 
B: bacon sandwich made using 2 slices of Ugg chia and nut bread that were on the turn!!
L: Oopsie bread with pate and brie
S: almond flapjack type stuff
D: cottage pie using mashed cauliflower instead of potato; pink fluff with blueberries - 1st time I've tried this and it is good

Lots of food today but I did spend the afternoon gardening so have managed to kid myself that it is ok!

Bought myself a Fitbit yesterday. Will be interested to see how many steps I do in a normal day when I wear it tomorrow!

Yesterday:

brunch (again): carrot and pecan muffin made with sesame flour, and cream "frosting" made with cream cheese, double cream, erythritol icing sugar and lime juice; large fig (a special treat this week!); hazelnut coffee with almond milk and a teaspoon of coconut oil

dinner: fried chicken breast with slivers of bacon, mushrooms, broccoli and cauliflower in a cream sauce, fruit salad with thick cream, green jasmine tea

supper: homemade cream of spinach soup, and a cheese and sesame flour muffin in a small bowl instead of a large mug...

Can we have the butter chicken recipe please.
For a crispy skin I mix minced garlic, a good shake of salt, dried tarragon, lemon juice, a little olive oil and some melted butter and spread it on the chicken before roasting on a wire tray over a baking pan of water. You have to stop it burning. Cover it if necessary except for the last 20 mins.
Make gravy in the pan or save for stock or soup. Or just for spreading on your bread/toast of choice.
 
Other herbs that go well are thyme or even better lemon thyme. When I was in charge of cooking I'd also put some sprigs and half a lemon inside a chicken before roasting. Now my weird & wonderful husband objects to me using the oven as it apparently uses too much electricity.

My blood sugar was 7.0 this morning before Insulin, Metformin and other meds. Just ate a banana for breakfast, and went out for lunch (at noon) with a friend, we had cheese burger and chips - I covered my chips in mayonnaise. It is now 5pm and just tested and got a result of 6.0, so gonna give it 1 hour and having cheese on toast for my tea.
 
Just mention this mincer which someone gave me ... it's brilliant and mashes garlic and ginger into a juicy pulp. Much easier to clean too than the usual metal press. Maybe it minces other things I haven't thought of yet.

S. 25g mixed nuts, babybel and some strawbs and cream later.
Made a spinach surrender for lunch and a ratatouille for breakfast tomorrow with bacon. Busy bee and its only 6:30!!
