What have you eaten today? (Low carb forum)

B: coffee n cream

L: ham, mayo, omelette with 2 eggs, onion, tomato and cheese, pepsi max

D: 2 sausages, 2 eggs, creamy broccoli, pepsi max

S: peanuts
 
Hi all update from yesterday. BG reading before breakfast 6.9
B 1 Poached egg / 1 slice burgen bread BG reading 2hrs after breakfast 6.5
L Tin Mackeral Fillets in tomato sauce / 2 plums / 2 pieces of cantolpe red melon.
D steak / broccoli / green beans / peas .
BG reading 2 hrs after dinner 6.4.
saying I had 2 coffees in the day with cream and a Splenda sweetener in both I am very happy with my readings.
 
Three egg omelette with tomatoes and cheese.
 
Another fasting day (I don't normally do two in a row but starting tomorrow I'm working 10 days without a break), so:

B and L: Nothing - just water or black coffee or redbush tea
Dinner: Ribeye steak and creamy parmesan sweetheart cabbage.
 

Hi i had burgen bread for the first time yesterday it's really nice i'm new to diabetes only got diagnosed about too weeks ago but it feels good testing your blood after eating and finding out somethings are ok to eat
 
Yesterday.........

B1: Chipolatas heated in microwave and eaten whilst driving to work, plus a Coffee with a dash of cream (5AM)
B2: Greek Yoghurt with Flaxseed & Blueberries (10AM)
L: Cold Roast Chicken with a dollop of Mayo and chopped celery (4PM)
D: Pork Ribs baked in HID's special sauce with homemade Coleslaw (8:30 PM)
 
So.... what's HID's special sauce??? . I love ribs but find most sauces are a bit too carby for me so I'm desperate for a new recipe.
 
I would like to know to what HID`s sauce is please.?
 
So would I, but she won't tell me.

All I know is that it has Frank's Red Hot as a base.....
 
Yesterday (Day off work)
B- Chicken stripes and celery sticks
L- Sauerkraut 500g (The power of fermented vegetables on my blood sugar still amazes me)
D - Roast beef with all the trimmings , swapping the roast potatoes for roast celeriac
S - Nothing I was so stuffed from the roast :-0 Only had some pickled onions!

I'm interested in the idea of fermented vegetables affecting BG. Do you eat the sauerkraut on its own? And do you have it hot or cold?? Does it work with all fermented veg? Do some work better than others?

No problems. I simply microwave the sauerkraut and eat it warm, it comes in 500 g packets here for around 40p so very cheap. I do however have to to watch out for hypo's after eating sauerkraut.

I still intend to find and try other fermented vegetables or foods but would prefer to buy them ready made. I'm also experimenting with pickled onions, which are not fermented as such (which I should mention before the resident arm chair scientist picks me up on this point with some Anecdotal evidence he's just copied and pasted from google). The onions are a having a similar effect which I guess is due to the vinegar.
 
Interesting! I'll have to try this. I've got some big jars of sauerkraut and other pickled veg that my husband enjoys so I will experiment. Thanks for the information. Oh! Just remembered that years ago I used to love pickled cucumbers, do you know if they work in the same way?
 

Never tried picked cucumbers , I will buy some on the weekend and have a go.
 
We used to make a mean Rueben in our Restaurant in the States.

The Saurkraut went onto the Flat Top Grill along with the Beef

When I eat Saurkraut at home now, I usually chuck it in a frying pan with a knob of butter.
 
A tablespoon of vinegar is 'said' to improve insulin sensitivity by up to 50%. I often just eat a TBSP of mustard if there is no where on my meal to go with it and it does keep my BS lower. It's a bit sharp but better than straight vinegar IMO.

Fermented veggies cause TERRIBLE bloating and wind for me. I wish it weren't so because I love Kimchi
 
Gotta laugh..... I was talking to OH about the pickled/fermented veg thing while he was stuck in traffic on his way home from work. So, bless him, he stopped off and got me some pickled cucumbers (Polish make only 2.7g carbs /100g) and.... some pickled eggs. Strange choice of vegetables! I might try a pickled egg for breakfast tomorrow. Never had one before.

@Kristin251 - a whole tablespoon of mustard? I've got steak for dinner so I'll give that a try.

Apart from the sauerkraut, what is a rueben?
 
I know the question was for someone else but thought I would but in any way.
The Reuben sandwich is an American hot sandwich composed of corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing, grilled between slices of rye bread. Though I wouldn't recommend the thousand Island dressing it has sugar as an ingredient though you could make your own low carb version.
