What have you eaten today? (Low carb forum)

whole tablespoon of mustard? I've got steak for dinner so I'll give that a try

Roughly. I just take a spoon and in it goes. Unless I am eating something it goes well with then I put it on it. I really do notice less of a spike, if any and sometimes I go a little lower

Let me know how it works! I think I would like to just eat an egg and a pickle, LOL. Keep me posted on how the pickled eggs taste!

B - Bacon
L - Turkey salad & mayo
D - Home made mackerel pate on spinach bread.
S - coffee and cream, maybe a pint of Coors later.
 
lapsed badly today with snacks, so writing it here to remind me that i need to eat less and more healthily

B - rushing out so apple
S - dark chocolate digestive
L - sardines mashed with white wine vinegar, cucumber & tomato salad
S - dark chocolate rice cakes, stilton cheese
D - fried chicken, onion, mushroom, tomato & spinach with wholemeal rice

Apart from the sauerkraut, what is a rueben?

The Corned Beef is not the corned beef you get in a tin.

It is basically the Irish Spiced Beef, and similar to Salt Beef and is the staple of St Paddy's day in the States. Most Americans probably think it is something Irish people eat every day, whereas it is something usually eaten on Christmas Eve.

Our Rueben was made on toasted marble Rye, with Russian dressing, Swiss Cheese (another American invention and nothing like any cheese you will find in Switzerland) and grilled Saurkraut.

Served with a Pickle.

You can substitute Leerdammer or Maasdam (or similar) for the cheese.


We made our own Russian Dressing with Mayo, Ketchup, Splash of Worcestershire sauce, splash of Tabasco and chopped pickles (gherkins)

There is no nicer Sarnie if made correctly, although our pressed Cuban was pretty **** good as well.

Hello again. I need to add a low carb microwave chocolate mug cake and cream to my food diary. I was hungry. And tempted so this was the best option.
 
B: half a beef burger from last nights takeaway. bacon wrap.
S: 4 whole almonds (need the fiber)
L: eatwater slim fettacini with a small amount of campbells condensed tomato soup with winter veg minus the carrots.
D: 2 pancakes covered in 90% dark choc and double cream
S: large lump of cheddar cheese

Left hanging on a blood glucose of 8.3 and nasty symptoms to match.
Took insulin with cheese. Let's see what my fbg will be.
 
I couldn't manage a whole tablespoon of English mustard with my dinner last night - too painful!! :eek::***::yuck: @Kristin251 you've either got a mouth of steel or you're eating a different kind of mustard!

I'm now off sick with my back (very large person fell on me at work and I took their full weight without having the opportunity to get balanced / braced for it first). But it gives me the opportunity of trying out the fermented / pickled vegetables and if it does make me a bit antisocial then only the dogs or my husband will suffer ;) :D

So, today I will update results as I go along:

Fasting BG: 6.7
B: Pickled egg and a pickled cucumber. Cup of black coffee Total carbs: 0.7g
+ 2 hours BG: 7.6!! :eek:

2 cups of red bush tea (no milk)

Pre-lunch BG: 6.7
L: 150g Hengstenberg bavarian style Sauerkraut and 100g ham. Cup of redbush tea (no milk). Total carbs: 3.2g
+ 1 hour BG: 7.7
+ 2 hours BG: 6.4

2 cups of red bush tea (no milk) and lots of glasses of water. I'm more thirsty than usual today..

Pre-dinner BG: 5.3
D: Duck breasts with chinese spiced hot/spicy red cabbage Carbs: 7.4g
20g brazil nuts: Carbs 1.2 g
+2 hours BG: 6.1

Snacks:
3 Pickled cucumbers Carbs: 0.5g
Little Bar Moser Roth 75% Choc Carbs: 7.6g

Bed time BG: 5.1

Total carbs for the day: 20.6

Yesterday was:

B: 1/2 Triangle toasted cheesie
L: Cold Roast Chicken with homemade coleslaw
S: Greek Yoghurt with Blueberries
D: Chicken & Mushroom Pie without the Pie, Broccoli, Cauliflower & Sugar Snaps
 
breakfast - slice of home made bread, with pate, olives and tomatoes. Then a cup of tea with milk and a touch of honey
Lunch - big bowl of lentil and vegetable soup
Drink - water

Dinner - will have a pork scnitzel with lots of roasted vegetables and a glass of red wine
Diabetes2 - controlled by diet
I try to have about 80 - 100 calories of carbohydrates each day and about 1000 calories per day
Only 53 kilos but want to lose a couple of kilos to flash out fat around my pancreas!
 
two egg scrambled with three salt and vinegar snack a jack they are only 6 carbs each.
followed by pineapple and yogurt.

One slice rye bred + a boiled egg for breakfast. One large helping of home-made salmon curry for lunch. Glucose readings? 5.4 before breakfast and 7.1 two hours after lunch.
 
B: 6 almonds and decaf coffee with alpro coconut and almond milk.
L: 6 picnic sausages and a cup of shelled mussels.
S: coffee mocha made with left over low carb choc sauce from pancakes. It was devilish.
D: looks like a piece of garlic bread pizza and cod fish fingers with a dip.
Supper might be almonds or glass of alpro milk.
 
B - green smoothie made with almond milk
L - scrambled egg with spinach & tomato, green smoothie made with water
S - 1/2 an orange (got to stop this)
D - chickpeas, egg & spinach with quinoa/wholemeal basmati rice
 
Hi....for dinner I had 3 Boar Sausages with Courgette, Red/Yellow Peppers (all baked in oven) before my blood was 6.7 after it was 7.4 I over did the vegetables a bit so probably burnt out any sugar/carbs it contained ha ha
 
I've edited my previous post to update my carbs and BG tests. The numbers are very similar to what I've been getting recently so I'm not sure whether the pickled egg, cucumbers and sauerkraut made a real difference. I think I'll fast tomorrow and try again with the pickled goodies on Friday.

BTW, the sauerkraut and pickled cucumbers were fine to eat but the pickled egg was horrendously vinegary. And I've got a whole jar of 'em!
 
I had a protein roll from lidl with light chedder cheese and sweet pickle i used low fat mayonnaise instead of margerine, before my reading was 6.8 after it was 6.1 not sure why it went down :)

Gotta laugh..... I was talking to OH about the pickled/fermented veg thing while he was stuck in traffic on his way home from work. So, bless him, he stopped off and got me some pickled cucumbers (Polish make only 2.7g carbs /100g) and.... some pickled eggs. Strange choice of vegetables! I might try a pickled egg for breakfast tomorrow. Never had one before.

Hi I love pickled cucumber a sauerkraut :p do you think pickled jalapeno peppers would be the same? Did the pickled cucumber and sauerkraut have much effect on your sugar levels?

There were several posts about eating pickled vegetables yesterday further up this thread - which is why I experimented today. If you look further up today's posts I've posted a sort of diary about what happened today and updated it on all my BG readings and food. :)
