What have you eaten today? (Low carb forum)

They are best in pairs, Deejay. I always buy two (just for me). There's another one waiting for tomorrow.

I notice avocado is on the menu of many here.
I was never a fan... until I discovered a new recipe (from an ex) for home-made coarse guacamole. I shall post to the recipe section when I get some other things out of the way.
 
I love wilted spinach with garlic and butter (used to use milk instead of butter, but no longer...)

Just put a pan on a low heat, lob in a mashed garlic clove and a dab of butter (or a dribble of milk) and a pinch salt - and the leaves, of course.
Stir a bit, as the leaves wilt.
It's ready when it looks like cooked spinach, which is only a couple of minutes.

B: Greek yogurt, berries and a few seeds
L: Chicken salad
D: Homemade Chicken and Veg soup with my first attempt at almond and cheese bread

I used mature cheddar for the bread and found it very strong on its own but dipped into the soup it was gorgeous and very filling I could swap for mild cheddar next time I guess, or would mozzarella work??
 
The bread sounds gorgeous.....is it likely to spike BG much?
 
Lunch.....Salmon,spinach and tomato with a little mayo
Dinner....Chciken breast with cauliflower,brocolli and kale
few raspberries with fromage frais 2 teaspoons ground flax seed and a sprinkle of Splenda

The diiner meal put BG up higher than I thought it would....not serious....from 5.1 to 8.3...just didn't expect a jump like that from what I thought was an okay meal

I shall report back in a couple of hours with my findings, but it only had 4g carb in a couple of slices so is unlikely. In fact, the homemade soup had more!

EDIT: At 1.5 hours my BG was 5.5, which I'm happy with. I forgot to test before eating (have had a very long day at work) but I'm never below 4.5 so the most my BG has risen in 90 minutes is 1.0

B: Chia seed pudding with cream and raspberries
L: Salad with tin of tuna, olives, olive oil dressing and half a sweet potato with butter and grated chse
T: Veg satay stir fry and baked wild salmon

Drinks: Herb teas and water with lemon, sugar free ginger ale
Snacks: 85% dark chocolate small bar
 
B: bulletproof coffee

L: hummus and a coyo

D: a quite ridiculous amount of cauliflower cheese with diced mattersons sausages and red pepper. Lush.
I may fit some strawberries and cream in later, but I will be surprised!
 
B: 1 tsp coconut oil

L: spiced chicken livers, braised cabbage

D: cream of greens soup (kale & spinach tonight - any greens near expiry get chucked into this); hot Feta/egg pate on lettuce leaves
 
Sounds good...no major damage.... ...all we need now is the recipe please
 
Can someone please explain "Ooopse bread" references have been made to "1 slice" so I assume it's a loaf of some sort, tho spoke to a baker in Sainsburys and he's never heard of it. Sorry if this is not the thread to ask this question

Of course!

Crumble 200g feta and mash in 2 large boiled eggs, 50g butter, 2 Tbs oil, chopped red chilli and a good squirt of hot sauce. I usually do it with a stick blender. The butter should be salted, and the oil unflavoured. My preferred hot sauce is Sriracha, though it's also fab with Encona. Best served from the fridge, on top of a hot burger or a sizzling steak. Yum!

I also eat it by the spoon...
