What have you eaten today? (Low carb forum)

Brekkie: boiled egg and 1 slice nimble toast
lunch: home made ratatouille with grated cheese on top
Dinner tonight: home made beef mince and cauliflower, and broccoli.
As I've been good I will have a piece of 80% dark chocolate!

Type 2 no meds....
Diet only and exercise, try to keep low carb but usually between 50 and 70

Would love you to post the recipe for your spelt bread.....already have a bread maker, and was enjoying fresh bread every day until my T2 diagnosis!!

This recipe is for the basic spelt, there are others for seeded spelt and for lemon and poppy seed spelt. I'll try them soon, but haven't yet. The recipe is for a Panasonic, but I expect will work with anything.

Use the paddle for rye, it looks a bit like a rake.

in this order
1 1/2 teaspoons yeast (the quick acting sort0
400g spelt flour (I've used all white, and all wholemeal, both worked well. The wholemael is a closer texture)
1 teaspoon honey
3 tablespoons oil. I used olive, but only because I couldn't find any others
1 teaspoon salt
300ml water

Bake on the 'rye' programme if you have one. This takes 3 hrs 30 mins on my machine. Otherwise I'd go for the basic option and hope for the best.

Both of mine have sunk in the middle. pre diabetes I would have thrown them out, but I did expect them to sink. Just ignore it, mine taste fine.

Breakfast : Greek yoghurt, mixed nuts & golden flax
Lunch. : 2 low carb crisp breads with cream cheese 1 piece 85% chocolate
Dinner. : 2 lamb chops with herb crust roasted & cauli, purple sprouting broccoli, cabbage with butter.
Evening snack: 2 pieces of cheese

Drinks: water 2 litres. 2 coffees with cream
 
Breakfast, 2 boiled eggs mashed with butter on slice of wholemeal as low on getting up, plus a yog.
Lunch, chicken soup, cheese and smoked salmon on an oopsie.
Tea, not sure yet but think it will involve parma ham and cheese.
 
B: Whole Earth crunchy peanut butter on 1 slice of Hovis wholemeal seed sensation toasted, half a grapefruit.
L: Full fat Greek yoghurt with a small kiwi fruit and a handful of blueberries.
D: Italian sausage and lentil casserole.
 
Breakfast...coffee

Lunch.Kale..Tuna, lettuce, tomato and radish with a tspn mayo on the side

Dinner....Cheese and ham omelette with lettuce and a little mayo
Fromage frais with ground flax seed and cinnamon

6km on exercise bike :)
 
Here 'tis Mongolia - It's not a muffin as we know it (sob) but that's what its called in cyberspace & it still makes for a convenient breakfast.

Flax/Psyllium Microwave Muffin

Equipment: 2 x 1/2 cup ramekins, a fork, a 20ml tablespoon, 2 x small bowls

Ingredients (makes 2 Muffins)

2 x 20ml TBS Flaxseed Meal
2 x 20ml TBS Psyllium Husk
1/2 tsp Baking Powder
Pinch Salt
20gm Chopped Walnuts

1 Egg - well beaten
20ml Olive Oil
20ml Water
1/2 tsp (to taste) Lemon Essence
Blueberries (I measure out a scant ramekin worth)

Method:

Mix the dry ingredients together in one bowl
Mix the wet ingredients in the other bowl along with the berries
Combine the two mixtures
Divide evenly between the ramekins
Microwave on high for 3 mins or until the tops are dry, tip out onto a rack to cool

A Few Notes:

If you google One Minute Microwave Muffin or Low Carb Flax Muffin you'll find quite a few variations on the theme. Some use coconut or almond flour, some use all flax seed, some employ the oven so there's a fair bit to play around with - hopefully you'll find one you like.

Most of the recipes include a sweetener of some sort but I find the berries & lemon play well enough off each other to leave it out.

I've also made them using a bit of banana (I mash & freeze in ice cube trays - I use one thawed cube) & vanilla essence which is enough to give a hint of banana without a spike.

They are pretty high in fibre (about 13gms per muffin!) so make sure you drink plenty of water with them.

Tea roast chicken with celeriac chips and coleslaw
 
B: chocolate version of almond & walnut scones in Trudi Deakin 'Eat Fat' book with blueberries and coconut Alpro
L: avocado, tuna, rocket, pine nuts, mayo & balsamic vinegar
D: cottage pie using garlicky cauliflower mash instead of potato, topped with cheese
 
Cooked spinach for the first time!! Another new on my list of like foods now!!
 
It's nice with a little grated nutmeg!
Didn't know that, thank you..... Have raw spinach with rocket instead of lettuce or with lettuce on salads just never cooked. Will try a little grated nutmeg next week with it!!

Oooo I have recently become a spinach fan...I love it wilted in butter with scrambled eggs/cheese or use it as a salad instead of boring iceberg lettuce....is even more yummy with a little mayo on it ...full of good things too :)
 
Yesterday, it was:

B: 2 egg omelette with spinach, bacon and gorgonzola

L: roast Med veg salad, cheese

D: spicy pork belly, sautéed cabbage

I enjoyed my meals a little too much, good fats and all that; feeling a bit worse for wear today, and blood sugar in the 6s
 
Brekkie - Peperami and a bag of Pork Scratchings, black coffee
Lunch - 4 slices chopped ham and pork, 2 slices cooked turkey and half a packet of salted peanuts. black coffee

This morning I took a thermos o black coffee to surgery.
Then had a lovely Craster kipper when I got back :-)
 
Kippers Are Great.
Best eaten for a late breakfast after Mrs DeeJay has gone out, on account of the pong.
Our neighbours brought me a pair back from the Isle of Man (I looked after the rabbits. And the cats. And the goldfish). They were delicious. The kippers, not the ...oh, never mind :)
