Apologies for the long post, I have been missing all week but below is the week so far.
Monday
B. Lidl roll with bacon and mushrooms
L. Chicken salad
D. Omelette with ham, onions, mushrooms, red peppers and cheese
Snacks. Brazil nuts. Handful of blueberries
Tuesday
B. Bacon and scrambled eggs
L. Celery, ham and cream cheese
D. Bolognese with courgetti
Wednesday
B. Kippers
L. 2 soft boiled eggs with Lidl protein roll soldiers
D. Liver, bacon and onions with cauliflower and turnip mash
Snacks rice crackers with dip, handful of walnuts
Thursday
B. Sausage, mushrooms and fried egg
L. Homemade mushroom soup
D. Chilie and garlic stir fry chicken with a spoonful of rice
Snacks stick of celery with peanut butter, small banana

What did you think of the courgetti - I've only done it once and it came out so watery it's kind of put me off?
I made a courgetti carbonara that worked out well. Hubby was having regular carbonara and I just made the carbonara first then added the courgetti at the last minute to warm through which kept it 'al dente'I basically chucked my courgetti in the wok with some butter for about 30 seconds and then served it - it's probably OK with a thickish sauce but otherwise definitely on the watery side

With courgetti I think it depends on the courgette and how you cook it trial and error. Sometimes fry in a wok on very high heat but for less than a minute or put in a colander and just pour boiling water over it to soften slightly. Link below hope it helps

I have tried the ready made courgetti but found it very soggy compared to freshly spiralized. The first time I made it I cooked it like spaghetti it was like a soggy mushThank you for the link. I think I definitely over cooked it. I've got a spiralizer but never used it (I bought my courgetti ready spiralized from Asda) so I think I need to experiment with other veg. I like the sound of butternut squash noodles.

A pomegranate pot is under starters orders lol
No problems with BG after this so ok for a packed lunch if necessaryLidl roll with egg mayonnaise (being daring with the roll to see how the carb goes at lunchtime - could be handy for packed lunches)
Hairy Biker's sausage casserole with low carb sausage and beans on the side for hubby - I had adapted it for slimming world so not too much adaptation for LCHF - having it with cauli rice and a couple of celeriac chips
May or may not have a glass of wine with it
