What have you eaten today? (Low carb forum)

B: Cacao zoats with seeds and coconut milk, one small meffin
L: Few tablespoons brown rice, 1 large courgette and two meffins crumbled on top, microwaved with a piece of butter on top (I was at work today)
S: (I usually don't snack, but my lunch did not fill me up) large piece of extra mature cheddar and a small piece of Emmentaler from a friend
D: salad with fresh vegetables and a small amount of brown rice, small glass of kefir and two meffins

I seem to become meffin addicted
 
B. Bulletproof coffee
L. Mackerel with 4 slices of chicken roll. Small ice cream cone. (Well it is a bank holiday)
S. Dry roasted peanuts with another coffee (decaf).
D. Egg mayonaise with remaining half of mackerel.
6 pieces of dark chocolate

Full and content.
Looks like my extended tummy is starting to go down. Is that my fatty liver losing fat or me?
 
B: Alpro coconut yoghurt with home made chocolate granola
L: Sausage and egg roll. Didn't eat the roll. Guess it was just sausage and egg then.
D: Duck fried in coconut oil, sweet potato chips, rocket, mayo; courgette and pecan cake with cream

Still feeling hungry, not sure why!
 
I need to add to my food a chocolate one minute muffin with low carb frosting. It was made with avocado! I had to try it because I could not see how this could work. It did! Smashing

Do you have a recipe??

This is the icing recipe I used that has avocado in.
For the chocolate frosting
  1. 1 ripe avocado
  2. 1/4 cup unsweetened cocoa powder
  3. 1/4 cup roasted almond butter
    (unsalted)
  4. 1/4 cup coconut milk
  5. 1/4 tsp ginger powder
  6. 1/4 tsp cinnamon powder
  7. 1/8 tsp nutmeg powder
  8. 2 dried cloves, stems removed
  9. 4 packets Stevia
You blend them all together. I put too much cinnamon powder in. I used cream instead of coconut milk
 
Yesterday
B: made an chorizo n parma ham, lactofree omelette with 2 eggs that were double yokers!! had half served with left over okra, tomatoes, peppers dish from last night. Mmm.

S: whilst driving, some homemade spicy nuts...cashews, walnuts, pecans, almonds all toasted with some random spices, a little scotch bonnet, a little oil, coarse salt and some last minute onion. Nice.

D: At family and they made a feast! But for me as I couldn't have carbs they made me a 'moolie' dish that is loaded with flavour, veg and 'peas' (legumes), instead of rice n 'peas' and under ground roots. Bless Uncle who made it. Didn't have the heart to say 'peas' cause my bloods to spike as well... so had a taste of all the different meats (stewed chicken, curry lamb, roast pork, bake fish) my moolie and a lot of salad. My BS went up to a +3 at 3.5 hours then BS was higher for the rest of evening. But no reactive hypo, interesting.

S: sm amount of nuts driving home.

S: sm glass of red with olives and a hunk of cheese....
 
Hello. It struck me that you may want the muffin recipe as well.

  • 2 tablespoons cocoa
  • 5 drops liquid Splenda (3 small packages of splenda)
  • 1 tablespoon softened butter


  1. In a small bowl, beat egg with fork and add in the rest of the ingredients until.
  2. a smooth batter is formed.
  3. Pour into a cup which will hold 8 ounces. You could use a coffee mug.Microwave for one minute.
  4. The carb count would depend on the sweetener. I don't think it would affect the texture of the cake.But, without the sweetener, you would have .7 carb for the egg and 2 NET carbs for the cocoa powder.About 3 net carbs in all.then add the sweetener carbs.
  5. The recipe says 1 minute but mine was more like 2 mins as the middle was still liquidy. I used a small Pyrex bowl too as I seemed to have a lot od mixture.

L: none not hungry

D: beautiful curried salmon; 3 dsp of spicy chickpeas; pan fried broccoli spears/mini courgette/asparagus in butter and 1 garlic clove.

Gotta test at 2hrs and every 30mins for as long as my bloods go down...

D beef kebabs, salad.

May have a square 70% choc later
 
B: Cheese Omelette, quadruple espresso with double cream
L: avocado salad with smoked salmon
D: pork fillet kebabs with salad
 
B - half a lidl roll and Brie
Snack - pink fluff
L - 2 slices roast beef, 2 slices of roast carrot, cauliflower cheese and cucumber (no idea of how much flour in Cauli, but no other choice as at school)
D - staff bbq, had 2 sausages, 1 burger, hallumi cheese stuffed pepper and coleslaw
 
B: Yog, rasps, blues and almonds.
11's black coffee and some more nuts..
L: Baba ganoush, celery, olives, avocado, some cold chicken.
D: way too much haddock/almond flour fried in butter, sauerkraut and peas.
Black coffee and one home made chocolate, coffee flavoured...

B: 2 duck eggs scrambled, 4 slices of smoked salmon
L: 3 slices of cheese with a handful of nuts and a miso soup that was vile. ..
D: a whole ball of mozzarella, 5 cherry tomatoes, 1/2 mini avocado and 2 slices or parma ham

S: creamy hazelnut coffee, Co Yo vanilla coconut yogurt and 2 snack size cheese fingers from Marks.

Yummmmmmmmmmmyyyyyyyy!

L - Avocado
D - Sausage & cheese on a Lidl low carb roll. It's my first time eating a Lidl roll that folks have raved about.

My two-hour BG after dinner was +3.5 The sausages and cheese are familiar food so it was the Lidl roll that did it. ******.

L: baked avocado with tuna mayo and cheese, salad - rocket, olives, sun-dried tomato, red pepper, pine nuts
S: chocolate peppermint muffin - was yummy despite not reading recipe properly and forgetting to put the butter in!
D: chicken & chorizo kebab, sweet potato chips

L: crustless quiche, green salad and mayo
D: slow cooked shin of beef with med veg followed by 2 squares 70% choc

A friend found some reasonably priced 70% and gave me a couple of bars to try. After months of not having choc handy, they now sit beside my chair in the evening. No matter how gorgeous they are, I will be quite pleased when they are gone!
