Beakfast: coffee with cream and a lemon butter coconut flour blobby thing
Lunch: another blob
Snack: and another one
Evening: crust less quiche and salad
Last thing: maybe, just maybe, another blob...

They are based on this recipe but (I can't help myself) I had to tweak.
They are incredibly crumbly, because the only binding agent is the butter, so I decided to cook them, bring them out of the oven and press a square of dark chocolate to the top. So that the melting chocolate holds them together... The best choc is a thin, flat square, like Lindt, or Moser Roth, rather than chunky, like G&B.
And when that worked, I had to tweak a bit more. So this time, I added the zest of one, and the juice of 2 lemons to the coconut flour.
I shudder to think of the fat/calorie content. You might as well just spoon butter from the dish. But... Blimey, they are gorgeous.
I just wish they weren't so crumbly.
Tried to bind them with egg once, but that made no difference at all.
Oooh thanks for that, will try them! Have you ever thought of adding some gluten in them to give a bit of elasticity?

Lunch: egg mayo, spam and 1 piece of brown bread. Also had an actimel drink, which may have been the cause of my later spike. Will try again tomorrow.
Dinner: "fakeaway" and salad. Got the recipe from Facebook and it's basically Doner kebab done in the slow cooker. I'm not really one for trying new things but I'm glad I did. It taste exactly like chip shop kebabs! For pudding I had a pack of dark chocolate orange buttons and a frozen tube yogurt.

Is gluten carby? Have a gap in my knowledge. Wouldn't want to add flour from a grain containing gluten...
By the way, if you add lemon, keep tasting the uncooked mix, and when you think you have got it right, add a bit more. The lemoness seems to tone down during baking.
Thanks for the tip! Gluten is the wheat protein separated from the starch. Fergus here do a lot of baking with soya flour , seeds and gluten and I remember making some of his recipes. Gluten has about 3.2 g carbs per 28 g product according to a website and is the ingredient providing elasticity in baking. It's good when added to soy flour etc so could work well with coconut flour too. For a whole loaf size dough you would add about 50g of it so the net carbs it adds is nominal.
