Due to a migraine, got out of bed really late with no appetite. Had a good portion of my homemade curried chicken and veg (broccoli, cauliflower, little carrot, onion and pepper) soup. For "dinner" I had some Greek yogurt with a handful of blue and raspberries and some nuts. Housemate is making a low carb crumble as she fancied some and I said that I won't eat it... So, ground almond crumble topping with stevia and butter. Filling, apples and blackberries with stevia... I'll taste some with a mound of whipped cream. :eek:

Lunch: Greek yogurt, raspberry jelly, raspberries, creamy decaf.

Dinner: cheesy coleslaw and leaves. A mountain of it.

D- homemade Lamb and spinach curry with a low carb tortilla & a green salad

Weeeellll...

They are based on this recipe but (I can't help myself) I had to tweak.

They are incredibly crumbly, because the only binding agent is the butter, so I decided to cook them, bring them out of the oven and press a square of dark chocolate to the top. So that the melting chocolate holds them together... The best choc is a thin, flat square, like Lindt, or Moser Roth, rather than chunky, like G&B.

And when that worked, I had to tweak a bit more. So this time, I added the zest of one, and the juice of 2 lemons to the coconut flour.

I shudder to think of the fat/calorie content. You might as well just spoon butter from the dish. But... Blimey, they are gorgeous.

I just wish they weren't so crumbly.

Tried to bind them with egg once, but that made no difference at all.

Oooh thanks for that, will try them! Have you ever thought of adding some gluten in them to give a bit of elasticity?

Is gluten carby? Have a gap in my knowledge. Wouldn't want to add flour from a grain containing gluten...

By the way, if you add lemon, keep tasting the uncooked mix, and when you think you have got it right, add a bit more. The lemoness seems to tone down during baking.

Ooh, what's this Atkins cereal? Any good? What's the low carb tortilla too, I normally replace with a lettuce leaf.


Skipped breakfast as I didn't get up until 12 (oops)

Lunch: egg mayo, spam and 1 piece of brown bread. Also had an actimel drink, which may have been the cause of my later spike. Will try again tomorrow.

Dinner: "fakeaway" and salad. Got the recipe from Facebook and it's basically Doner kebab done in the slow cooker. I'm not really one for trying new things but I'm glad I did. It taste exactly like chip shop kebabs! For pudding I had a pack of dark chocolate orange buttons and a frozen tube yogurt.

Mix 500g lean lamb mince with:
1tsp dried oregano
1/2 teaspoon mixed herbs
1tsp garlic powder
1/4 cayenne pepper
1tsp salt
1/2 tsp black pepper

Mix thoroughly and shape into an oval. I'm quite squeamish with raw meat so tried mixing with spoon but gave up as used my hands, it's really the only way to ensure it's all mixed in. Smack it about to get rid of any air pockets.
Then bung it in the slow cooker on 3-4 hours in high or 5-7 hours on low. I used 400g mince and cooked it for 3 hours on high.

I've been using the tortillas for a while and they're very useful with curries or as wraps.
I've only just discovered the cereal cos it's on offer with ocado (4 for the price of 3) - it's nice and crunchy although I think ill use it as a sprinkle on yogurt rather than having it as a cereal with milk

Thanks for the tip! Gluten is the wheat protein separated from the starch. Fergus here do a lot of baking with soya flour , seeds and gluten and I remember making some of his recipes. Gluten has about 3.2 g carbs per 28 g product according to a website and is the ingredient providing elasticity in baking. It's good when added to soy flour etc so could work well with coconut flour too. For a whole loaf size dough you would add about 50g of it so the net carbs it adds is nominal.

Hi all,
I have started since Saturday to seriously go on this LCHF regime, just got a few questions, my morning BG are higher than have been, 8.5, 8.9 whereas usually around the low 7 or under, I assume these will get better, pre evening meal last night was 5.6 and post was 5.3, but I am still taking insulin (another question as was considering stopping it, just to see if I can manage) I assume my high BG is from liver dump / dawn phenom.
Anyways food related, I miss my coffee as we are not allowed milk per se, I have tried single cream and just bought the gold top 5g fat milk, is this ok to have..?
And where yoghurts are concerned I've been looking for highest fat ones but they also seem to have high sugar, what am I reading wrong. I went for a zero Greek yoghurt and I sprinkle dessicted coconut on top, but is the zero fat wrong ?

Sorry if I'm in wrong thread and for anal questions I'm totally new to this regime, my BG though is a steady 6.5 throughout day or lower, not spiking up and down except mornings, and lost 6lb since Saturday.

Hello, weird science! I find that as a type 2 on metformin only, my blood sugars have been a little confused at first. It can take some time, even a few weeks before everything settles down, especially as you are on insulin. Good weight loss though!

About yogurt, the recommendation is full fat and natural as that should counter a lot of the carb absorption and reduce spiking. But, some people tolerate no yogurt and some tolerate a lot. You just have to find your balance!:)

Intolerance, career politicians, reality TV and so-called celebrity culture, mobile phones in the quiet carriage.
Had a sachet of porridge this morning, made with water but with double cream and a few berries added at the end. I don't eat this often, and previously only tested at +2 which seemed OK, but today tested at +1 because I felt a bit edgy and it was 10.0! Went for a walk to the shops, came back and tested again at +2 and a bit, 5.7. Still learning, need to do more testing on marginal foods I guess.
