Ha ha! I figured one a day. I'm on a walk now and rushing back to have one with coffee when I get back!

Well you could make them with more finesse and dip them in chocolate once hardened. They do taste good though! Like a healthy ferrero Roche

My problem is I would have to padlock my fridge if I had 30 lovely nutty balls in there. They would be calling out to me :oops:
 
Just make ten then or freeze them!

Or just make them more turd like so you're not tempted?!

LOL Freezing is a good idea. Will definitely give these a go now that I have a load of coconut oil :D
 
Am I the only one who has totally and permanently lost my appetite to even think about nut balls now? :-|
 
I've always been obsessed by food so can't really relate but this low carbing has definitely reduced my appetite!

300g nuts. I used almonds and Brazils.

40g pumpkin seeds

Handful of linseed

30g cocoa powder

50g salted butter

50g peanut butter

5 heaped teaspoons coconut oil softened

Agave syrup to taste

Ground almonds to 'dry out' consistency.

Chop all nuts and seeds in food processor.

Add all ingredients together except ground almond.

Add ground almonds 50g a time until you have a good consistency where you can roll balls in your hands and only get a little bit greasy. They are quite floppy so work fast and be gentle. Just make sure they are 'together'.

Place in grease proof paper and put in fridge for a couple hours. The above will make about 30 balls which will last in the fridge for about a month. You can get creative and add flavouring like vanilla or cinnamon.

They're very morish so keep them hidden in the fridge!

thank you for this deb. I really must buy some coconut oil - I keep looking at it but the price puts me off. However not alot is used at a time so it should last a while.

I have to say though that freezing would not prevent me from eating them - I have an addiction to frozen chocolate and peanut butter brownies:)

Look out for holland and Barrett penny sale and buy it then. So much cheaper! None of this healthy food is cheap!

thanks for the tip - I didn't know holland and barrett sold coconut oil
 
Breakfast 2 quorn sausages- I've discovered if you cook them a little bit too long they do actually taste a bit sausagey- mushrooms, toms
Lunch cold chicken, stir fry veg and 15g Makway curry made up- as BS was 5 at 2 hrs I'm calling that a win.
Dinner More cold chicken, cauli cheese and plate of green veg, bit gravy eaten whilst Mr E polished off a steak and ale Fray Bentos tinned pie with his veg- not something we would normally ever eat but found it lurking in pantry. The innards smelt lush so I'm going to get some braising steak and make my own with a splash of beer.

Trout salad
Chilli with lettuce, cheese and soured cream :) :) :)

May have another nut ball before bed if peckish...

Pudding: nut ball thing :joyful:

I made them today...only thing I changed was swapping agave for vanilla extract and a sprinkle of truvia. I put the mixture into the fridge for a while before making them into balls and they were easy to shape. They are very filling. The peanut butter is my favourite bit :hungry: Thanks again, Deb!

I'm going to play about more with ingredients for the next batch and may even treat myself to a coffee grinder so I can get the nuts smaller and will add coconut too. I love them! Glad you do too x
