Brekkie; bullet coffee/fat coffee (300 ml coffee with 40 g coconut oil and 45 g Kerrygold)
Afternoon coffee with 1 tbsp coconut oil and 1 tbsp Jersey cream
Dinner; planning to have a couple of home-made burgers made from grass-fed beef mince, butter and some kimchi
Friday snack probably a piece of cheese or a bag of "awfully posh" pork cracklings
Woho, today my old jeans easily fitted, haven't worn them for the last 6 years, this very low carb thing is doing it. Weigh/in day tomorrow.
Regarding calories (which you know don't really count) most days ends on 1500-1800, don't believe in starving my body and make it hold on to everything (common mistake). Even a weak with a lot of bearnaise sauce and days with 2000-2200 cals I had a weight lost.

I've just discovered frozen berries.Ones with no added sugar or anything. I had some last night and they were gorgeous.
As in bung some strawberries in the freezer and eat without defrosting?

No I bought them already frozen from Tesco, raspeberries, blueberries and mixed fruits. Then I take a portion out pop it in a nowl and leave in the fridge to defrost. Doesn't take long. They're cheaper than buying fresh fruit, I read the nutritional value is the same and they're lovely and icy cold. And they don't go off before you've had a chance to eat them all.

That muffin sounds gorgeous!!! Everything I love is in there. Do you make them? Can I have the recipe please?
Hi Marie - I am loving the muffins. They smell like cheese and onion pasties from Greggs!

The recipe is a work in progress, but I quite like the last batch which is

DRY
6 oz almond flour
1 tsp baking powder
0.25 tsp onion granules
Salt and black pepper
0.5 cup grated cheddar
2 tbsp chopped pickled jalapeño peppers
2 tbsp sun dried tomatoes

WET
2 tbsp melted butter
2 tbsp double cream
3 tbsp water
2 eggs

Mix the dry things together. Mix the wet things together. Mix them all together.
Spoon into 6 muffin moulds. I use silicone ones so they pop out easily and don't need liners.
Top with a little more grated cheddar. Bake for about 20 minutes at 350F/180C/gas 4
Eat when cold. Can be frozen. About 4g net carbs per muffin.

Look good. I'm waiting to try lo carb baking when I've shifted another couple of stone and the woodburning cooker is lit as then it's just a case of bunging it in when the mood takes me.

Breakfast/lunch had eye scan this morning so had post hospital brunch at local cafe- big breakfast of bacon, two lovely thin pork sausages, egg, loads of mushrooms( swapped beans for extra)- Mr E had my toast and fried bread.
Snack- slice of ham waiting to be picked up in town
dinner stir fry of chicken, onion, mushrooms, beansprouts and bamboo shoots, bit of curry sauce

Lunch - 6.5 before and 5.6 after - mushroom stir fry with added kale
Snack - babybel gouda
Dinner - 5.6 before. Not done after yet - cauliflower and broccoli cheese

Lunch: One slice of toasted wholemeal bread with a poached egg on top
Dinner: Sliced gammon (let over from yesterdays gammon joint), salad with mustard dressing and two boiled new potatoes
Snack: A portion of frozen mixed berries.

Breakfast - 2 steamed eggs, an 3 strips bacon at work in the cafe

And for a treat I up'd the game with my thermos of coffee before I left home. 700ml capacity. Filled 1/3 with hot coffee, added about 3 tablespoons of butter, 3 tablespoons of coconut oil, and about 2 tablespoons of heavy cream 1 pack Splenda, and 1 pump vanilla sugar free syrup. Capped it an shook the heck out of it for 30-45 seconds, topped up with the rest of the coffee and set off for work.

OMG..... Really good coffee! The shaking was fine, didn't need to use a blender.

Lunch was a tin of herring in hot sauce and a container of broccoli, mid afternoon snack of mixed nuts. Deciding on supper now...

Hi B, is Xylitol ok to have? I was looking through old posts to see what the best sweetener is to have (excluding stevia and artificial sweeteners .. hate 'em all).

How much have you lost in how long modesty?
Almost at my 2 year anniversary with LCH and have lost 17 kg (sorry being metric) that includes a long stand still after Xmas into the spring when I was to liberal and gained 3-4 kg and since end of May shredded 6 kg. I think my body measures changed more then the weight these last couple of months, had a couple of wide and loose linen trousers with drawstring and didn't have to unbutton or unzip them :p

So... Attempt 1! Good overall

Didn't have any argave so substituted surkrin gold.

Also used pre chopped nuts rather than chopping in a blender. Used half measures and choc buttons (about 7 85% choc)

Second attempt vanilla underway.

Waking BG was 7.5
Breakfast - none - woke up late and had to get car to MOT testing station in another town by 8.30am...eeeek!
After 1 hr swim (before lunch) BG was 5.5
Lunch - roasted sprouts and halloumi with sweet chilli and balsamic sauce (20g carbs)
After lunch BG was 5.7 at 1hr and 5.0 at 2 hrs
BG was 4.8 before dinner (not tested after dinner yet)
Dinner - fresh tuna steak with mushroom stir fry (butter added - tasted devine!) and dessert was frozen berries with full fat greek yogurt and flax seed (tasted like ice cream - also devine!) - 20g carbs

I'm not going ot be testing before and after every meal in the long term, but I'm still elarning new things, such as, my carb tolerance is somewhere between 20g and 40g at a meal. I haven't seen a 4.8 before, and this is the least amount of carb I think I've eaten, so clearly LC is bringing my BG down, it's just a case of finding that sweet-spot!

My dinner tonight all homemade. Tandoori chicken with cauliflower bhajee and cucumber ribbon salad with yoghurt mint dressing 15g carb for that big plateful, I am stuffed, too full really but it was very moorish mmmmmmm

I am going to jump on the LCHF band wagon once again, I NEED to. I lost alot of weight when I did it the first time round, but then I was diagnosed with type 1 and was told I should eat "normally". Well. my blood sugar levels are all over the place even with having done the DAFNE course. So i'm going against advice and seeing where this takes me.

BREAKFAST
I was very high this morning; in the upper 20's :arghh: and so did not eat until later, I had a bit of plain yoghurt with some frozen berries and a tea.

LUNCH
Still high :( 17.9mmol...it is taking a long time to come down. I had some left over mince with some broccli with melted cheese on top. Small portion.

DINNER
Dinner tonight will be from a recipe I have just found, its basically tinned tomatoes with eggs and spices and some bacon. Its called Shakshuka or something.

Hopefully my levels come down and tomorrow I can start off properly with a better number as it has ruined my day today.:wacky:

Good luck with it. Since it's a radical change in your diet, do be careful to keep a close eye on your BG though...don't want it dropping too far too quickly! Regarding your high levels today, have you done any exercise today? I usually go for a swim or something to bring mine down if it's too high.
