Hi, and welcome, @icklepea, I found giving up breakfast muesli difficult at first, as I'd always thought of it as 'healthy', but a great LCHF alternative that suits me is full-fat Greek yoghurt with flaked toasted almonds, 10 blueberries, cinnamon and vanilla essence.
To replace toast and bread, I make 'oopsies' from eggs and cream cheese. See
www.dietdoctor.com. They are like pancakes and I can use them in any meal. They are not crunchy. If I need crunch, I eat a crispbread by Finn with butter. They are narrow and not extremely high carb but be careful because they are moreish.
Have just noticed, sorry, that you don't eat eggs, so disregard the oopsies.
For treats I eat sugar-free jelly with double cream, or a square or two of 85% chocolate or a spoonful of walnuts and seeds and a small piece of cheese.
I buy sliced cheese and make wraps with them, rolled up with peppered lean ham and iceberg lettuce.
For dinner, stir fry and cashews, a chicken or beef casserole with lots of veg, or a curry with cauliflower 'rice' - raw cauliflower blitzed in a processor, then steamed over simmering water for a minute.
