What have you eaten today?

Dinner: cowboy pie (haricot beans, courgettes, onions and jalapeños in Cajun tomato sauce with cheesy cauliflower mash and more cheese)

Sounds delicious. I know you're vegetarian, and this would be out for you, but I'm thinking of adding bacon and garlic as a variation.

Cinnamon mug cake dollop cream, coffee. Forgot to put sweetener in it but ate it anyway!!

Tuna salad, pork scratchings

Was not hungry today at all.

I think I might have added garlic paste to the tomato sauce, come to think of it. I sometimes add Quorn chorizo to savoury dishes which may have a similar smoky bacon-y effect. I think cowboy pie could also include chopped up sausages, veggie or otherwise. Just chuck in whatever you fancy :D

I've added cauliflower to the shopping list. I've read a lot a recipes where it's an excellent rice replacement, but I haven't had the opportunity to try it yet. Life seems to get in the way during the summer and there is little time for planning and relaxing. But I have flagged the cowboy pie as something to try soon!

I've had such good results on the LCHF diet that my wife decided (on her own) to join me two weeks ago. Her food likes are not as diverse as mine, and some days she struggles a bit to find variety, but she's extremely happy that in this short time she's down 3kg!

That's great that your wife is supporting you. Hope she likes cauliflower mash as it is a good winter warmer.

Just remember to test before and after cowboy pie as it contains haricot beans. Beans are good for protein and fibre, but are quite high carb. They don't bother me if I eat them in moderation with lots of cheese to slow them down.

Breakfast: 20g Gluten free cornflakes with lactose free semi skimmed milk
Dinner: small Jacket potato with 1/2 tin of reduced sugar and reduced salt baked beans, with 1x sliced cooked ham, 5g of lactose free cheese and a small salad
Tea: Homemade low fat, low sugar beef casserole with a small potion of sweet potato mash in the middle

snacks: a pear, plum and 2x rich tea biscuits and all under 1600 calories

I am newly diagnosed 3 weeks fresh and still working things through , I am making a food menu each week and cutting down on my calories and added sugar, i have more natural sugars but not to many, I have cut out High carbs such as bread, pasta, rolls and substituted it for low carbs such as small jacket potatoes, sweet potatoes, brown rice and a heck load of salad :-). I try to have more carbs during the day and minimal at tea time. Meat and Veg are helping, and i have lost a stone in 3 weeks which is also beneficial. I am still confused about the whole thing, i am young as the doctors keep saying to be diagnosed, and trying to just figure things out. its a life style change i have cut out chocolates and found small alternative treats which is far and in-between, i have also been looking through books for ideas, and researching everything possible to control this and turn it around as much as possible.I feel a bit out of my depth if i am going to be honest as i don't really understand what is good sugar and what is bad sugar, and how much i should have and what is the best things to have. I want to improve this condition and turn it around as much as possible. but it is so daunting as i feel limited but trying to make food as interesting as possible, breakfasts i have problems with as i am limited as i can't eat eggs or lactose and i don't no what cereal is good and i get bored really easy with cereal. lol so that i am having trouble with. any ideas would be great if you guys don't mind that is!! Thanx

I found out I was type 2 in early June. Still learning my way around things myself. My blood sugar readings vastly improved once I cut my carbs drastically. This includes all forms of sugars and starches. I feel a million times better.

I may be wrong, but it's my understanding that there is no such thing as a good sugar. In the body, sugar is sugar. But as I said there are many more much more experienced people on this site that will chime in soon.

My breakfasts are sometimes leftovers from the night before... In most cases, even yummier once the flavours mature. :-)

I also enjoy 90% coca chocolate in moderation (1 or 2 squares a day). Very little sugar and carbs.

Hi, and welcome, @icklepea, I found giving up breakfast muesli difficult at first, as I'd always thought of it as 'healthy', but a great LCHF alternative that suits me is full-fat Greek yoghurt with flaked toasted almonds, 10 blueberries, cinnamon and vanilla essence.
To replace toast and bread, I make 'oopsies' from eggs and cream cheese. See www.dietdoctor.com. They are like pancakes and I can use them in any meal. They are not crunchy. If I need crunch, I eat a crispbread by Finn with butter. They are narrow and not extremely high carb but be careful because they are moreish.
Have just noticed, sorry, that you don't eat eggs, so disregard the oopsies.
For treats I eat sugar-free jelly with double cream, or a square or two of 85% chocolate or a spoonful of walnuts and seeds and a small piece of cheese.
I buy sliced cheese and make wraps with them, rolled up with peppered lean ham and iceberg lettuce.
For dinner, stir fry and cashews, a chicken or beef casserole with lots of veg, or a curry with cauliflower 'rice' - raw cauliflower blitzed in a processor, then steamed over simmering water for a minute.
Good luck with your diet. There are lots of ideas and useful links on this forum.

yer i am finding it hard i have cut my carbs down dramatically which is good, i have resisted sweets and chocolate but found low sugar yoghurts if i fancy a treat i am not gonna lie, it is hard but slowly getting use to it... i do miss chinese take away cut all that **** out too :-( but its for the best. I will benefit from it in the end. :-)

If I may, I'd like to provide some thing you might be able to look forward to when you go LCHF. Granted, it took some time, probably about 6-8 weeks, but in sticking to 50-60g of carbs in a day I found that my cravings stopped! I am no longer affected by the smell of French Fries, or the sight of pizza. I walk around each and every day now feeling 'content' and nutritionally 'satisfied' No craving for a bag of salt and vinegar chips. I can watch people eat cake and I'm not bothered. Sounds strange, to others, but I guess my body is happy and satisfied.

I can't speak for the others on here, but this is what happened to me.

I have just bought some sugar free jelly which i am gonna make up tomorrow, has anyone tried diabetic ice-cream and what is it like? i am having lactose or low fat walls ice-cream, not to much if it contains lactose as it actually plays havoc with ones tummy. thank you for the cauliflower rice idea i would of never thought that. does it taste nice? could you add broccoli to it? broccoli and cauliflower rice. I use a lot of natural ingredients and try and snack on meat rather than carbs, but i do like the odd treat like quavers. :-)

My IBS cleared up when I went LCHF. Food that had me running to the washroom, I now enjoy, as long as it meets the LCHF criteria.

Low Carb is not to bad, i am trying to find alternatives i don't mind potatoes but got to be careful not to have to many, I do find since i have gone low carb my tummy hasn't been so bad and i have been pain free in my abdomen for 3 weeks. which is plus may i say. Yea i have also got diverticula disease which is apart of the inflammatory bowel family, so i have to be careful what i eat with that, but that seems to be getting under control with the low carb diet, so fingers crossed!! its just trial and error at the moment :) thank you for the advice too

Try some 70% , 80% or higher chocolate. I like the 90%, have even tried the 100% and found it okay. I usually have 1 square each day.

I have found some nice diabetic chocolate wafers in boots, and 2 of them have only 1g sugar and and 75 calories :) i buy a pack and they tend to last 2 weeks which is good but i do recommend sealing them as they can go a bit stale.

I suspect you're going to take a hit on the carbs in the wafer parted of the product. Does it list the carbs in a serving?

Many diabetic products are not the best at being diabetic friendly

it had 8g of carbs, per 2 wafers! which isn't to bad i don't think! i am not sure
