Hi Ellie-70... welcome... check out the low-carb recipe thread here - some really lovely recipes to be had... and they are tried and tested too... :) Good luck with the testing - it is very interesting to see the results... you can ask any questions you like on this thread, someone will always help you - these guys are very well-informed and seasoned 'testers' - and they are kind and supportive.. :)

Having had to knock all the cereals on the head...
Breakfast. My fave now i'm lc... bacon, mature cheddar cheese, rosemary and mixed herbs, onion, cherry tomatoes, sea salt, ground black pepper, Ohm'lette topped with spinach, pan fried in olive oil and finished off under the grill with a cuppa. I have to pinch myself all that and a full belly and just 7g.

T'was so nice i didn't want to give the dog any but he looked at me with those eyes and managed to haggle it off me.

Hour later bg steady at 6.3 no spike. Result... ;)

Glad you gave the dog some ;). Nice how we can eat like a King/Queen and still be good to our bs when we put our minds to it :D
 
No not planned treat, i went shopping lidl & my partner asked me to get him three croissiants as i put them in a bag i glimpsed at the apple turnovers buttery crispy & thought yeah im gonna have one, but alongside i saw beautiful jam donut, it jumped in the bag lol.
I had already had my brekkie glic and waited till one hour after taking met, then eat both donut & app t/nover.

My pcn dont understand i like to be happy & not stressed about things, so sometimes i give in to temptation, not constantly thinking about what i cant eat.

The crab sandwhich gave me terrible heartburn still it went down good.
 
Did you make the swede noodles with a vegetable spiraller? I often make the zuchinni noodles that way and was wondering what other vegetables would work. Is swede low carb?

Yes, I used a veg twister called the Betty bossi vegetable twister. Cooked swede is pretty low in carb but as its a root veg I tend to watch the quantities of it a bit. It worked a lot better than courgette, for which I'm still developing my method. How do you stop the zucchini noodles going all watery when cooked?

Hey, @Hedonista Where do you get your almond bread, or do you make it yourself, is it very low carb and what does it taste like in comparison to normal wholemeal? I like the sound of it.

I got the recipe off this forum:


Cheese and Almond Bread
Makes 1lb loaf

10 1/2 oz (300g) ground Almonds
1tsp baking powder
2oz butter
5 1/2 ozs (155g) grated cheese
3 beaten eggs

Combine all ingredients in food processor or bowl, quite a stiff mixture, place in loaf tin.
Bake at 180º 50mins


I hadn't had any bread for a couple of months when I had it first, so was just over the moon to have something to spread butter on! But I think it's delicious. I went away for the weekend recently and took a couple of loaves with me, and everyone there loved it and asked for the recipe. It's so quick and easy, too, and my blood sugar stays rock solid after I eat it.

Drank 2.5 litres of water, 1 decaf coffee with milk (can't stop peeing!!)

L. Veg soup, 2 breakfast balls.
S. 1 slice toast.
D. Salmon fillet, peas carrots n sweetcorn, cauliflower hash browms. Jelly n cream. Bg post 2h 6.8

That was much easier than bread, worked out well. Like a cross between savory cake and white bread without the carbs, went well with my chicken salad, with garlic queen olives and a cheeky glass of dry white. Thanks @Hedonista it was lovely. I worked it out as approx 2.8g carbs per slice. Thats a keeper for sure. No spike. I am able to lower my insulin dose pre meal now ;)

Bg was 5 before meal 4.9 after. Full belly. I'm type 1. 15u novomix 30. That rarely happened.

B: 2 boiled eggs, coffee with cream
Snack: almonds
L: chicken, bacon and avocado Salad. The end of the dark chocolate Lindt bunny.
D: takeaway curry: chicken saag (so not much sauce), mutter paneer and a bit of veg curry, with sautéed cabbage that I made myself.
 
Yesterday:

B/L (after fasting bloods taken) - in a cafe, cheese and mushroom omelette, 2 rashers bacon, salad and coleslaw. Dinner: 2 lamb and thyme burgers, and some swede noodles (a new experiment) cooked in butter and garlic oil, with cherry tomatoes, kale and grated cheddar. Spoon of aioli. Then some dark choc Lindt bunny, and some cheese. I didn't get to test after that little lot as I was busy with the baby. In other news had my first retinopathy exam today and all is well on that front.

Here are the swede noodles. Quite convincingly spagetti-like, no?

Awesome!! They look amazing... what did it taste like? Did you get the taste of swede? Not that that's a bad thing... :) Do you have a sprializer?

I read that you salt it, like you do cucumber and aubergine, rinse well, pat dry in kitchen paper and pour boiling water on it briefly... haven't tried it yet as spiralizer is in the UK and I am not... :) it was delivered a couple of weeks ago - can't wait to try it... I wonder if it would work if you just added it to your sauce briefly at the end? I made courgetti with a potato peeler - more like papardelle of course - I cooked broccoli in butter, olive oil and garlic, added some flaked poached salmon, dill and lemon zest, then threw in the courgette briefly - black pepper - very nice and the courgette didn't do any more than just wilt really.... will you let me know if you find a method that works well? Thank you... :)
