I saw a coconut flour muffin recipe and ive got to the stage I could go a baked good so instead of the 3 tbsp honey do you think apple sauce would work it's the think liquidy type or yogurt or something?
When I was transitioning to LCHF I used Xylitol which doesn't rot teeth and usually doesn't spike blood sugars too much (some perceive an after taste). This is available in most supermarkets. You might also try using almond flour, or balanced ground almonds in place of regular flour.

You could replace it with xylitol and erythritol and add some yogurt/milk.
Regarding cocnut flour Im not a big fun of it. Prefer almond flour, works well in most recipes
Also, beware of sweetening things to the extent in the recipes, after a little while without sugary 'treats' the tastebuds become more sensitive and the normal amount of sweetness is excessive. I used to eat Bramley cooking apples without sugar added, and was surprised at the reaction of others I inflicted them upon... That was a good few decades ago, but I used to make my own fermented drinks, which were also too sour for most people.
T2 I have a tablespoon of honey everyday in my everyday serving of porridge. With a tablespoon of coconut oil in it. I seem to tolerate honey but a spoonful is the limit. Only hard local honey. After reading about the great honey laundering scam I quit liquid honey and all shop supplied honey. Local beekeeper nearby. Beautiful stuff.
