It's just because it needs a liquid to replace it or it will be too dry ? Water maybeI'd just skip it completely. I don't eat any kind of sugar
It's a mix of dessicated coconut and coconut flourWhen I was transitioning to LCHF I used Xylitol which doesn't rot teeth and usually doesn't spike blood sugars too much (some perceive an after taste). This is available in most supermarkets. You might also try using almond flour, or balanced ground almonds in place of regular flour.
