A fabulous landscape, I like all the suggested landscape and the many colour layers you have managed.I never know nowadays whether it is a bank holiday weekend or a holiday or a whatever day. Retirement more or less means these things mean nothing. Even a weekend doesn't really mean a break in my schedule..l

Painting for today digitally in Procreate.
I was trying to get that deflating moon I saw the other day out of the kitchen window. I think I might have a fairly adequate painting of that moon, although it would probably be a half moon by now.

The wonder wheel of crab rarebit with pickled spring veg came in at 4.8 this am - adapted from this recipe: https://www.bbc.co.uk/food/recipes/crab_rarebit_with_31052
We had the girl in the bubble yesterday so round the park, feeding squirrels and water birds and then down to the beach to watch the Sunday lifeboat drills - home in a shower of rain. No Edward I puddles to fall in as the potholes have been repaired quite recently. T-shirt gate in the afternoon. “Why do you have so many t-shirts?” - I have now sorted them out: some for lounging about in, some for going out, some for gardening, some for when riding my bike and some just because I like them. Oh, and three dragged kicking and screaming into the charity bag to make room for the three new ones purchased last week - there you go, job done.
Art - saw a balloon being released on the beach - quick sketch on a bit of yellow, gold flecked rice paper - about 5x2 inches. Have a wonderful bank holiday Monday - hope you get a free watering of your gardens. Koffy time.

T shirts and Shirts are a mystery. MRs MC counted mine and wanted to know why a 71 year old retired bloke needs 76 such things. I'm going to have to do some tug of warring to retain some of my holier ones.

I have Linwoods ground flaxseeds and inulin mixed with kefir for breakfast virtually every morning because it is my all time favourite breakfast. Topped with Yeo Valley Greek style yoghurt and berries and a sprinkling of flaked almonds. Absolutely delicious.The flaxseed and inulin base for cheesecake is remarkably like digestive biscuit provided you smash flaxseed in the nutribullet* and mix about 1 tbls of inulin per 4 of flxseed, mix well and leave for a day of two.

The caramel requires patience and careful watching. The transition is rapid and a few have burned saucepans and set off smoke detectors. There was a recipe book of LC foods and the bars were infamous CCBs. I developed these in response to the crazy expensive and high carb bars from shops. We bought silicone moulds, soap bar sized, did as you suggest for the cheesecake base but added the caramel into the mix, left to set then made a ganache with Montezumas or other high content choc I couldn't stand any other way , dipped the bars into that, back in mould and fridge. They keep well and freeze fine. Hope that helps. Will definitely try mixing flaxseeds, inulin and butter and leaving it in the fridge for a day or two to get the cheesecake base. It sounds like it will be equally delicious. The hard part will be leaving it in the fridge for a day or two.

Looking good. Reminds me that we have not been to one of our favourite biking hotels in Dolgellau for a while.The weather turned bleak and I fell out of Spring Mode. I have spent many a wet day like today on Welsh Mountains and so back to Cader Idris but from across Mawdach Estuary. We know a small difficult to get to camping ground up a slate rock track, no caravans or large vehicles, tight even for Wilfrid, room for maybe four vans and a few tents, no electric plugins and quiet with stunning views of the mountains and sea.
This is from a sketchbook pencil drawing I did on my last visit, early morning before the sun gets above the mountain.

Thank you for the recipes. Looks like I will be busy.The basic mix worked out approximately like this:
High fibre chocolate flaxseed bars base recipe
Per bar made in soap bar sized silicone mould
Base
1.5 ounces or 42.5 gms flaxseeds
⅙ ounces (4.5 gms) inulin
½ ounce or 14 gms butter
Weigh, melt butter. mix then press into creased moulds and leave in fridge to set. Add a layer of caramel and /or dehydrated rasps next day. Moulds come in 6s. Just fill each one.
Ganache
1 row chcologic belgian chocolate or *20 gms Callebaut 100% *This needed some using
No sweetener needed if using chocologic, I need plenty of liquid sweetener if using 100%
1 ounce or 28 gms cream. Melt chocolate into cream. Dip bars into ganache then return to moulds and fridge.
The caramel was done by eye/instinct. I did dehydrate raspberries and add to the bars.
Here's something we tried. I had never been able to force myself to eat creme brulee before going LC. (I'm not keen on that hideous eryth stuffage)

we were up fairly early this morning because the previously cancelled smart meter installation was scheduled for this morning.
All done and neatly installed now but it apparently isn't so smart because, despite the info. the engineer was given, it won't connect to the radio network. Could be the thick stone walls
It's been put on the naughty list for IBM to sort
A very chilly day here with a cold wind rushing over the village so any visitors are going about wrapped up in big coats and scarves, proper Bank Holiday weather

I haven't been to that area for years now though we spent time all around there when I was a youngster, Barmouth, Dolgellau, Porthmadog, etc. we also rode most of the narrow gauge railways and went down the slate mine
art bit - still on my original paper so there are some of the minor flaws in the sizing, not too noticeable I hope
