What have you eaten today? (Low carb forum)

@amgrundy and @Mongolia - no success yet on the meringues, I'm afraid.
I tried making them with erythritol this time, as the stevia didn't work (rubbery and horrible, as you said).
These were crisp when they came out of the oven and I thought I'd cracked it. Unfortunately though, when I tasted them - although they were chewy in the middle - there was very little substance to them and I didn't like the taste. They weren't actually sweet; it's difficult to describe, but they left a strange, 'cold' aftertaste in the mouth. Also, by the time they'd been out of the oven for an hour or two they ended up rubbery and flaccid, so I threw them away.
Ah well, back to the drawing board.....

Rubbery and flaccid meringues? No one wants that! Thanks for trying again @debrasue
 
L: heaven .... LivLife bread, good quality ham and strong cheddar - under the grill, a proper toastie. Not tried this with LivLife bread before but so so tasty :):)
 
Day 7 fast.

D chilli con carbs, cream, lettuce cheese. Choc chia pudding

But it was too bland so I added a square of dark choc melted and it was so much better!

Yep... lots of drinks and no rip to keep my salt up.. But that's it. Not even sure I can do it yet...we'll see :)

Ooh that's a bit hard core! Perhaps you better not read about all the lovely food the rest of us are having over the next 4 days!:arghh:

L: had remembered that school lunch today was going to be a buffet sandwich carb fest to celebrate the Queen's birthday so had took in my own crackers and cheese to avoid the temptation:angelic:. Sadly hadn't anticipated the celebratory cupcakes in the staffroom with the Queen's face on in rice paper. Felt it would be akin to treason to refuse one and I didn't feel that my public execution would be a good thing for small children to witness so did my duty and ate one:oops:
D: bolognaise (the last of the batch) with roast cauli; home made strawberry ice cream:hungry:
 
B: Sukrin roll, sugar-free peanut butter, sugar-free lemon curd
L: Hummus with raw cauliflower
D: Curried pork with steamed cauliflower; cherries

Have to say husband is doing a great job doing all my meals for me.

B: cup of tea.
L: pork belly, 2x jersey royals peas.
D: low carb crackers with pate, cherry tomatoes, cherries.
S: water, no sugar vimto.
 
B: Coffee & cream
L: Ham, eggs, half a Sukrin roll; low-carb scone
D (will be): KFC (changed my mind)

I make 16 rolls from this mix, which I buy online from Amazon....

L: 2 chicken drumsticks, lettuce, coleslaw, guacamole (that's a new one on the school salad bar!)
D: chicken peanut curry with cauli and a lot of spinach from the garden - it has gone a bit rampant! Salted caramel Oppo ice cream:hungry:
S: some gluten free ginger biscuits found in a colleague's draw in desperation whilst trying to proof read and correct a mountain of reports! Somebody has got a bit of a comma obsession!:wacky:
 
I made a roast beef & swiss sandwich with mayo & mustard, couple thin slices of tomato on ...
not bread...
but something that tastes almost just like bread and only 1-2g per slice!
i.e. processed cheese slice (the ones that often come individually wrapped in plastic) .. take plastic off throw on parchment/wax/freezer paper and microwave for 45 seconds to a minute. It'll puff up nicely and be airy and a bit crunchy. What a yummy sandwich it was!
 
Nada, nothing...64 hours into my 4 day fast:)

Regime: 20g LCHF, run 1 mile daily, weekly fasting.
