Hi honey! It's good to have you back - we missed you.
I'm doing ok, thanks. I'm recovering from sort of weird virus thingy which developed on Saturday and knocked me for six, but I'm feeling better with each day that goes by now. How funny that you should mention the lemon curd - I'm just having some on a bit of toast for breakfast! Life's good; I'm managing to keep my BGs pretty stable and well within range most of the time, I'm in demand work-wise and have the luxury now of being able to cherry-pick the jobs I want and choose when and when not to work, and the grandkids are gorgeous and keeping me entertained. I count my many blessings every day.
How about you? How are you and your crew? Are your family issues sorted now and giving you some peace? I do hope so - you deserve a break and some me-time, considering everything you do for them all!

Hi debrasue, glad your getting over the virus not nice. I`m doing ok too, my results were good, staying in the low 5s most of the time , lost the weight feel a lot better for it. Only thing now is being on the LCHF diet has raised my cholesterol to 5.5 from 4.3, seen doc on Tuesday says to just cut down on the fats I have been eating, told her I didn't want to go on statins, she was fine with that. Only to go back in 6 months. If I can control the Type 2 diabetes I know I can get the cholesterol down too. My mother and father are not too bad, dad waiting to go in hospital again. Mother turned 90 yrs . Got the last grandchild off to school now so have more time in the day to do my family history , started going to the records office at Preston transcribing wills, I just love it. Grandchildren are good for all of us keeps us going. x

Lemon curd on toast ..... ????? Think that trumps my marmite! Sounds delicious :):):)
Well, it's not the real thing, of course, but I have to admit with a nice bit of butter it's not a bad substitute! PM me if you want the recipe. :)
(I'm not excluding anyone here - I don't plan to post my recipes on the open forum any more, but anyone is free to PM me if they want one. I'm happy to share)

Non-insulin injectable medication (incretin mimetics)
B: Two LC rolls =4carbs
L: Two Low Carb rolls with thin sliced cheese and a tomato =4 plus tomato
D: Mince using the gravy left from Chicken thing from last night, with sprouts! = 5 or 6
S: Four cups of creamy coffee =5g
= 17carbs for the day

FORGOT THE PIECE OF LC CAKE AT LUNCH...3g

S: cheese and biscuits

So far on a count of 20g carbs ... interesting how they sneak up

D: Cook frozen Pork Dijon (no energy to cook!), only 8g of carbs - green veg

Want cheese afterwards but might be up there on my carb limit. Maybe lashing of Malbec will help :)

Didnt count any carbs or cals, maybe I should as my HbA1c has stalled

D: moussaka and mangetouts. I made a HUGE batch of M. Was supposed to freeze half. But none of it has made it to the freezer! None!

Looks like I'm gonna have to make more! ;)

Lots of Malbec here .....!!! It's from Argentina tonight but let's not worry :) your food day sounds good!

It is soooo easy.

Just do a low carb red mince - onion, mince, garlic, tomato, worcestershire sauce...
Cook aubergines as normal
I add courgette too
Layer up in baking trays
Instead of bechamel, i use blobs of ff cream cheese, with grated cheese on top, and a light sprinkle of parmesan

Bake for 35-40 mins at 180 degrees.

Serve with salad or extra veg.

It isn't 'authentic' but it sure fills a hole! :D

Co-op 85% chocolate is very good, eaten a whole bar - just 25g of carbs, but slap me in the morning please ....

Brekkie: missed it rushing off to work at 7.30:)

Lunch: toms and cheese cubes

D: fresh salmon fillet, cauli and broc,,small glass of red follow by a yoghurt (just 5g of carbs in the yog.

Best Plowman's lunch I ever had was at the Jolly Tanners pub at Staplefield in Sussex in the late 1960's.

He (Bob the owner) showed me how he pickled his onions from his time as a royal navy cook. I still use the same method for crisp crunchy pickled onion goodness.

@walnut_face re your comment about 99% choc, don't do it! I bought a bar from fancy Rococo, £4.95 (shoot me now, I'm a marketing mans dream!) and can't stomach it ....

Sticking to Divine 85% now, best I've found

Worry not. It need not go to waste. Just use it for cooking, or hot choc, or melt it, and stir in some cream or nuts...

never let choc go to waste. Haha!
