What have you eaten today? (Low carb forum)

Could you have a bug working on you? I find my sugars rise before I feel unwell.

Great... just in time to feel rubbish for Wednesday when I've got a meeting with HR and my manager to have my contract terminated I think, you can't blame them, I've been off sick since last February.

Cancel it - not something to deal with when you are ill.
 
Was 6.9 this morning which I was surprised at after yesterday's big meal. Anyway only had time for a black Tea and it got to 7.3 before I could stop it in its tracks with breakfast. Back at 6.9 and falling.
B. 2 Heck chicken sausages , 2 rasher streaky bacon and 2 scrambled eggs with parsley and a dash of double cream. Black coffee and a black Tea earlier.
L.couple of slices of Mortadella and a black Tea.
D. Smoked salmon and prawns and leftover haggis with neeps and cauliflower mash.
 
An Eating Day

B: bacon and egg
L: lc orange cake and cream
S: pork scratchings
D: Tom Kerridge's slow roasted lamb shoulder with anchovy crust and onion gravy, with mustard spring greens. Also did mashed celeriac.

A very interesting dinner. I have never taken 6 hours to slow roast a lamb shoulder before, but my goodness, it was worth it! Melting. Not 100% sure about the anchovy crust. Didn't rock my world.
The onion gravy was supposed to have sherry vinegar in it, but i only had Mirin. Which was sublime. I will be doing that again.
I boiled the celeriac in lamb stock, then mashed it roughly in butter. Oh yesssssss. Am thinking celeriac is showing promise. Only had it for the first time last weekend, so it is all a new experience.

I'm enjoying cooking at the mo. It usually bores me rigid, and i do the minimum and get out of the kitchen. I'm wondering if it stems from having the new boiler, so the kitchen is no longer The Icebox From Hell...?

I haven't "invested"in the Tom Kerridge book because I find some of his cooking a bit faffy, with so many steps involved.

He has always liked crusts, but the deal breaker for me was a lamb shank recipe I made ages ago now, which included a salt/garlic, almost hot water pastry crust. The crust wasn't to be eaten, but what a faff, and the crust absorbed all the lovely meat juices. Of course, it could have been me not being PlanetBreathe's answer to Delia.

Maybe I have to rethink, but at the moment I seem to have a million things to try, having recently bought my Instant Pot. It's a wonderous thing.

That said; today I don't feel like cooking at all, but I'm sure when I get hungry I'll change my mind.
 
B: Bulletproof coffee

L: chicken breast in a cream and mustard sauce, aubergine and pepper stew (thank you, work canteen! It was delicious)

D: leftover lamb shoulder made into a curry with veg and maybe some konjac noodles

Breakfast - "my muesli" - coconut chips, nuts, seeds, cinnamon, coconut oil, Greek yogurt, strawberries, 1/8 small banana + coffee

Snack - almonds & Brazil nuts

Lunch - cucumber, beetroot & feta dip, wedge Brie

Dinner - pork ragu, salad with cos lettuce, cucumber, avocado, cheese, dressed with walnut oil & lemon juice
 
B: lc orange cake and cream. I could get used to this Marie Antoinette lifestyle.
L: two small slices of cold lamb with anchovy crust. Have to say that the crust was MUCH nicer on the cold meat than the hot. Strange but true. And the garlic... oooh, lovely. I think I must have been emanating garlic from every pore for the last 24 hours.
S: 70% choc with orange and almonds. yum.
D: The mirin and onion gravy was so delicious last night, that I decided to try something similar again. This time I threw an onion into a pan and caramelised it, then added some of the cold lamb, diced up. Konjac rice, mirin, worcestershire sauce, some lamb stock and some sugarsnaps. Worked quite well. Berries and cream for dessert.
 
Yesterday's dinner Spicy Lentils and Spinach (recipe from Blood Sugar Diet book) was gorgeous - but spiked my BG to 9.1 - which is REALLY high for me and it stayed high right until I went to bed. I'm assuming it was a response to the slow release carb lentils.

I have only lost 1lb this week - but I have always struggled to lose weight and not being able to exercise at all makes it even more difficult than it used to be. :( Fingers crossed that I lose some next week.

Breakfast: 30g blueberries and 100g Asda full fat Greek yoghurt
Lunch: Nothing
Dinner: Cauliflower and Broccoli Cheese with gammon

I've joined you with the lurgy Chook. My legs get 'ill' and sugars rise before the bug emerges! Yesterday evening legs were seriously bad and went to bed on a 7.3. This morning awoke to an 8.6. Forced scrambled egg down.
B. 2 scrambled egg with parsley. Black Tea
L. Cold meats salad probably
D. Baked cod loin with spouts/mushroom/greens mix and a herby butter.
A lot of First Defence up my nose!!

Oi, Marie Antoinette, could you point me in the right direction for the recipe of that orange cake. I've been chatting to a pre-diabetic acquaintance who, this morning, got the party line waffle about healthy carbs with ever meal and NEVER any cake from our DN. Poor girl is in floods of tears and so confused so I thought I'd confuse her a bit more by taking her round a cake she can eat. :)

D: Cooked by DD
Chicken and bacon in a cream and homemade pesto sauce with courgetti and spinach and a few butter beans and pine nuts mixed in. A real lip licker!
