Diabetics R Us

I could be wrong, but I think it is a female from memory. I probably am wrong

It is not important except that it is quite concerning when a fellow 'sufferer' especially an elderly one seems to be at risk of damaging their health. But I think I shall end the topic here as it was not fair of me to discuss another member behind his/her back. I do worry, though.

It is winter. It is Crumpet season. I am sad...

Morning all

Tonight we are off to Canterbury to stay in a hotel for the weekend as we are meeting up with 2 couples that we caravanned with for many years. They live in Southampton & Portsmouth and we do this every year at different venues so no doubt there will be naughty foods and lots of alcohol involved

You lot were chatty last night and I obviously missed a certain thread, that's what I get for only dipping in and out of here.

Have a good weekend folks.

H :)

I have no idea what thread they're talking about either. Your weekend in Canterbury sounds like a lot of fun and I hope it will be, with great weather. You must tell us lots of tales when you get back. :D

90 SECONDS LOW CARB ENGLISH CRUMPETS

Ingredients
1 large egg (60g net weight)
pinch of fine Himalayan pink salt
1 tsp fine coconut flour
1 tsp fine psyllium husk powder
¼ tsp baking powder
1 tsp flaxseed oil
1 tsp ACV (apple cider vinegar)

Instructions
beat egg until frothy using a manual balloon whisk.
add all other ingredients, beating between each addition.
smear 2-3 drops of flaxseed oil over bottom and side of a ramekin or similar size microwave-proof container (my one measures 8.5cm in diameter) and pour mixture into it (do not put the lid on).
cook in microwave on 600W power for 90 seconds; check and cook for another 15-30 seconds if still wet.
invert over a rack to cool and for the steam to escape.
once cooled, slice across horizontally to make two crumpets, cover and store at room temperature.
to serve, toast (broil) the uncut (outer) side only; smother the nooks and crannies (soft) side with butter (or whatever you like) and enjoy.

Been Christmas shopping today at Ashford outlet. Quite succesful, lighter bank balance & 1 aching foot.

Had to steal this from a diabetes facebook group:

Your post made me do a double-take since I have been carefully minding my teenaged cat's eating habits! :D

I spent many hours trekking to Canterbury and back by bus over several weeks with an eight week old baby and a two year old in tow visiting their mother in hospital very exhausting as I remember.
