Are there any vegans here that eat low carb to maintain stable blood sugars? How do you get good quality protein without upping the carbs? (Beans, lentils, quinoa, whole grains, etc. all come with a fair amount of carbs.)
I just wish to point out that having and consuming a source of vitamin B12 is vitally important for a vegan diet. As fresh sources of B 12 tend to be animal protein based, thus alternative sources are needed.

Protein seems the biggest complication to eating low carb and especially keto vegan. If soy doesn’t agree with you, pea protein seems the best way to up protein.
I just take a low cost supermarket vitamin B supplement and my last blood test showed my levels at the high end of normal. Marmite is also good!

I am very fond of seitan and make my own to many different recipes. It is high protein, low carb, non soy. Ideal, in fact!
