I'm going to be useless when it comes to your specific question, but... GI doesn't really matter all that much if you don't need insulin. A carb is a carb is a carb, and whether it gives you a quick spike or a slightly lower one that lasts a longer while, your body'll have to deal with it, which is generally not good. For a T1 or an insulin dependent T2 (or one of the many other types), they'd need to know whether to split the dose, and then GI would matter. If you just cut carbs, without overcomplicating things with GI in the mix, you'd be likely to get excellent blood sugar control.Can anyone tell me the best webpages or books that have all the glycemic index numbers for food? Ideally the website will work well on a smart phone.

Any veg that stores sugars are Carbs yes. So Carrots, Potatoes,Turnips, Sweet Potatoes etc. But Green veg no. Rule of thumb, if it grows below ground it’s carb rich, if it grows above ground then it’s fine. Corn on the cob, maize is also carb. As others have already mentioned, there's high carb veggies, and low carb. You'd be surprised how versatile cauliflower rice is for instance. But I haven't had carrots in 4 years. Above ground and leafy green's usually fine, underground not so much... And pulses can be very starchy, which some can tolerate, and some can't. (I can't.
