Breakfast is almost always wholegrain, low GI toast and a nice cup of tea (it was today). Then I either have a late lunch and a snack for dinner or vice versa. This was today's lunch - crispy salt and pepper tofu, low carb organic black bean noodles, and crunchy slaw with sesame dressing (and a sprinkling of schichimi togarashi). So good! Dinner will probably be coconut yogurt and fruit.

Fabulous: it’s certainly a “feast for my eyes”! I haven’t heard of schichimi togarashi, so had to check it out: it does sound tasty.

In (lockdown U.K.,) my normal supermarket doesn’t sell it and it may be awkward to track this down from a specialist delicatessen at the moment. That big American online company (the one that pays staff and tax as little as it can) does sell it.

Thanks Ledzeptt! I have made it before when I had an abundance of mandarins on my tree and was looking for something to do with the zest. That recipe looks similar actually. I made the mistake of using regular dried chilli which makes it pretty hot. The one I buy (House Foods brand) says "red pepper" in the ingredients rather than chilli, which might be the same thing, but i find it to be less hot than the homemade one, which is good because you can sprinkle it more liberally. It makes everything taste better! It must be terrible being in lockdown so long - I hope things get better for you soon and you can freely buy schichimi togarashi and sprinkle it on everything! :)

Me too! I had pineapple yesterday as well. I have some sweet potato hummus in the fridge so might have that for lunch. I have it on Corn Thins (thin puffed corn and grain crackers) with cucumber, radish, rocket and toasted tamari seed and nut mix on top. :)

Good luck with your new approach. I was a bit worried about the impact of a prolonged fast - lack of protein etc!

I've still yet to try anything from Tofurkey. Haven't tried Follow Your Heart Cheese, either. Curious to try the FYH 'egg' and the Veganaise (interested to see how it stacks up against the Hellman's V mayo, that I like).
Apparently, Heinz are developing a vegan mayo and also salad cream, which I'm quite excited for :)

You should share pics! I'm sure I'm not alone in loving food pics and inspo! :)

"Inspo!"?? Haha! Well, the presentation is hardly Instagram-esque, and the carb level isn't likely to inspire anything but worry. I'll see about posting some pics, later on,

Here are a few examples of some meals. I might think about grabbing myself a nicer plate and take more care of presentation, if I'm going to continue to share ;)

I get it, you love your high-protein meat diet, but why do you feel the need to haunt the vegetarian and vegan forum telling people they eat too many carbs? Imagine if I visited Carnivore Corner and started lecturing people about fibre and antioxidants? I just wouldn't do that. There are people here subscribing to all kinds of different diets, but all with a similar objective, doing the best for their health. Especially in regards to ethical vegans and vegetarians, it's important to respect their space and not push an agenda opposed to their core beliefs.

I get it, you love your high-protein meat diet, but why do you feel the need to haunt the vegetarian and vegan forum telling people they eat too many carbs? Imagine if I visited Carnivore Corner and started lecturing people about fibre and antioxidants? I just wouldn't do that. There are people here subscribing to all kinds of different diets, but all with a similar objective, doing the best for their health. Especially in regards to ethical vegans and vegetarians, it's important to respect their space and not push an agenda opposed to their core beliefs.

I was simply interested in what someone's blood sugar does when eating high carb meals.. if you don't want to share then don't.. why be so defensive?

There are other discussions where people openly discuss carbs and the impact on their BG, yet you come to a thread where vegetarians and vegans are sharing the foods they eat. If someone invites you to comment on their carb intake, that's totally different.

I love my spiraliser! Tofu and veg with coriander dressing, toasted peanuts, and there are some noodles underneath.

Chargrilled tofu and veg, two kinds of pesto (basil and coriander), Greek salad with Bio Cheese feta, and potato salad made with low(ish) carb potatoes (a variety called Spud Lite with 25% less carbs).

It was a perfectly legitimate post by @bulkbiker .... and one I was wondering about as well. This thread (and all others) is hardly exclusive and never should be to Type.

Unfortunately, I can't afford to test my meals. I am currently testing FBG every few days. Fortunately, I'm trending down at 8-9 points lower than when I first posted readings, two weeks ago (Down from 18.3 to 9-10). Not out of the woods, by a long-shot. However, those readings are after 10 days of meals like the one's above. I've been weighing and logging all my foods, and I'm guessing my daily averages are around 350-500 carbs, and 2500 calories a day...ish.

Here's an example of my day 4 intake:

The following morning, my reading was 9.2. Actually, it first showed as 8, but i thought it must've been an error. Re-tested about a minute later and got this. This is down from 14.8 on day 1, and the 18.5 that I previously lowered with two days of juicing.

What I'm currently eating is by no means what I would really think to eat. But for this first phase, I thought it'd be worth testing how i do with ad-libitum carbs from foods on the 'Danger' list (Bread, pasta, white-rice, potatoes, with sugar in my tea and coffee). Phase 2 will be more in line with the more whole-food approach. Still with ad-libitum carbs, making sure to keep fats really low. As to why I'm eating so much: Currently eating to hunger/appetite. I'm also trying my hardest to not lose weight during this first-phase, as I'd like any improvements to be independent of weight-loss. I'll concentrate on weight-loss in the next phases.

And, lastly. in the spirit of avoiding confounding factors I've been avoiding all unnecessary physical activity. I've had a couple of longer walks to go shopping, and that's it. Will be stepping-up (literally) exercise, this week.

Did a home OGTT (74g pure Dextrose in 300ml water) on day 1, with bad readings. Will test again, at the 3-4 week mark.
