Sunday dinner at Mum's again today and a bit more snow shovelling to try to clear her drive. A very mild chicken curry for dinner, (much milder than mr gee and I prefer but Mum isn't keen on anything spicier

)
followed it up with a hybrid of baked custard and almond clafoutis. I added four broken up sponge fingers to the bottom of the dish and then a dozen physalis berries cut in half. Poured over a custard made of an egg, double cream and almond milk, beaten together with some erythritol, truvia and vanilla and with 2tbsp of ground almonds. Left it to soak for an hour and then baked it. (For myself I wouldn't add sponge fingers but this was for Mum, I had LC chocolate sponge with full fat greek yoghurt

)
Sponge fingers are about 5.3g of carb each and physalis are 11g carb per 100g so still fairly carb controlled. It made three reasonable portions to serve with a drizzle of extra cream so probably about 10g carb per portion.

A fantastic, majestic tree now that it's finished, the light you have brought to the tree is particularly well painted
art bit - I'm going through a patch where I don't think much of anything I'm painting, perhaps it's a bit like playing golf, some days every drive will land well and sometimes it's the bunker
