I used small coffee cups to measure.
1 small cup oats
1/2 small cup melted butter
1/2 small cup powdered dates (I bought powdered dates awhile ago, they were not cheap, as I only envisaged using a teaspoon at a time.)
Pinch ginger and pinch of salt.
Then microwave, medium setting. About a minute, then checking every few seconds. And tasting to see when done. Suddenly they were done, and when cooled, not crumbly at all. I did it on a glass dish lid in the microwave. Flattened it to 1/4 inch high (it rose a bit). And it made about a 7 inch square. I did take my blood sugars before I started, because I knew I would be nibbling for taste. And I ate two of the final 1/2 inch squares (only 1/4 inch deep). It tasted delicious all the way through, even the uncooked mix! It held together well when cooked and with being cooked in the microwave was chewy in texture.
I declare Tuesday Flapjack Tuesday. There are another 8 half inch squares. So two just on a Tuesday and they will last me a month.... I don't want to mess up my weight loss...
Blood sugars rose .8 by one hour, an hour later they had almost gone down.It is a bit late in the day to eat this treat, I had my last/final meal at midday. It would have been better to eat it between breakfast and lunch.
