I've just posted about my insulin sensitivity on another post of yours. So I might be a "special case". But I don't low carb. On average I'm about 100 - 250g per day. My last hba1c (September) was 43 (6.1%) so clearly it works for me. Next hba1c will either prove or disprove that for me!
So if you're in range and good hba1c why go low carb? Less carbs means less insulin.... So less severe hypos possible sure. But if you're dosing correctly then that should be no problem.
However if you're struggling to get in range I would revisit the GI of foods firsts and consider the types you're eating. And if you still can't achieve the range then I would consider reducing your carbs slowly and monitoring the effect
