What have you eaten today? (Low carb forum)

Breakfast....coffee
Lunch....Tuna, spinach, tomato and mayo
Dinner.....Quorn mince ( 4g of carb)...tomato, onion, basil, oregano and wilted spinach
Raspberries and low sugar jelly
 
Bm was 4.7 before Americano, done a bm now 4.7 (hour & half later ) bm is 4.3 - ☺ ideal
 
Breakfast, cheese & ham omelette, lunch blueberries, tea chicken salad & pork scratchings
 
Breakfast
2 fried eggs 2bacon fried tomato and mushrooms
Lunch
1slice of Frittata salad
Tea
Parmesan chicken & Spinich ~~~ pudd Strawberries & Cream
 
B: egg-fast pancakes with blueberries and cream
L: chicken breast, salad
D: omelette with mushroom, onion, rocket, tomato, chicken & cheese; breadless pudding
 
B: coffee with cream
S: 9bar
L: sausages wrapped in bacon, lemon cream chia pudding* (delighted with this!)
D: pulled pork, cauli cheese and sugarsnaps
Will have more chia pud in a mo

* I squeezed 2 lemons for the juice.
Added water and erythritol until it was the right balance of tart, fresh lemon, not too sweet.
Spooned in chia, by guesswork, till it looked like the chia would thicken up enough (7 tablespoons)
Placed in fridge for several hours.
Just before serving, mixed in double cream until it tasted perfect.
Made 4 servings.
 
small shreded wheat this am for breakfast then walked the dogs 2.6 miles and off to work soon :)
 
B: yogurt, pecans, hazelnuts, pumpkin seeds, strawberries, 4
L: celery, olives, feta, avocado 1/2, sauerkraut and Olive Oil
D: pork chop, spring greens, sauerkraut, 1 chocolate Lime and Ginger.

loads of grilled lamb.
some more nuts, a bar of stevia milk chocolate

rinse & repeat...
 
I did NOT eat a slice of the spelt bread I made in the machine for Mrs DeeJay at her request.
Although it smelt delicious I rushed to the freezer and defrosted the last three little phoopsie squares I was keeping for an emergency.
Loads of butter applied.
Craving appeased.
Real bread, who needs it? ;)

I was going to say yes but to be honest looking at my records from last year I'm confused because I was still eating stuff I don't now. Maybe I'll try the spelt bread by itself.

10.15am 5.2
12.50pm 5.3
1.15pm Lunch: cheese & lettuce & 5 other salad veg, olive oil & cider vinegar dressing. Leftover tuna bake with cauli + cheese topping. Fruit tea & instant coffee (whole milk)
3.15pm 6.7
5.50pm 5.5
6.15pmTea: Roast pork loin, 4 steamed veg, onion gravy, roast parsnip, Bramley apple sauce.
8.15pm 7.7

*bottom line* better safe than sorry!

great. do let us know. most of the criticism of bread is based on "modern" wheat. was wondering whether einkorn, emmer or spelt in small quantities made any difference to blood sugar..
 
I was a bit surprised to find stevia plants for sale at my local garden centre, I bought 2, and ate 2 leaves as I was planting them in my veg patch. They tasted sweet, so now I have the plan to let them grow for a while, then harvest some leaves for my home made low carb ice cream. I will liquidise them with the egg yolks and maybe replace the pecans in my recipe with pistachios, because I think pistachio ice cream is usually green and will match the stevia. I'm turning into Mrs Wotsit from Vicar of Dibley.
 
L: Spelt bread sandwich (1 slice) buttered with gammon, lettuce & mayo.
Before: 5.6, 2 hours after 6.5, 3 hours 5.5.
The bread recipe for a 700g loaf included 2 tbsp brown sugar and I used skimmed milk, not thinking I would eat any. I added seeds.
 
I would like to make my own bread.
I've seen quite a nice recipe which contains
Almond & coconut flour. Gosh isn't it expensive
Nearly had a heart attack when I saw the price.
Does anyone here know the best place were I can
Buy on- line?
I love ice- cream in the summer and I can't eat normal
Stuff. But have seen a recipe for coconut ice-cream
Which I will put up in the recipe section.
