What have you eaten today? (Low carb forum)

Would anyone be interested in a tread for low carb shopping list? I'd love one. I'll give it ago. Mine won't be fancy but maybe a start. Please help!

Ooh recipe for lemon cream cheese pancakes please:hungry:

The basic recipe is:
80g full fat cream cheese,
3 eggs,
half teaspoon baking powder
a teaspoon of psyllium husk
all whizzed together (I use a stick blender) and let it rest for 5-15 mins before frying in coconut oil or butter (or both). It makes three pancakes

For lemon pancakes its the basic recipe above but I add the grated zest of half a lemon and a few drops of vanilla essence
Then, when the pancakes are cooked, sprinkle with lemon juice and sweetener to taste.

You can use the basic recipe to make all kinds of different flavours - lime and coconut, chocolate, cinnamon, plain vanilla with blueberries, or add a savoury filling. .
 
Today:

Breakfast: Coffee with double cream
Lunch: Lime and coconut creamcheese pancakes
Tea (at work): Usual half bag of mixed salad leaves, this one has got rocket and lambs lettuce, the other half of yesterday's chilli, soy and ginger chicken breast chunks, avocado and 6 cherry tomatos
Supper (at home): salami topped with a little cream cheese.

This is a normal work day menu for me and I'm finding my bg is really steady at between 4.9 and 5.4 all day
 
B: cup of tea, splash of whole milk, three tablespoons full fat greek yoghurt
L: Coop hot smoked salmon, rocket, spinach watercress, cherry tomatoes, cucumber, drizzle of olive oil
Later for dinner: omelette grated cheese and ham, steamed courgette, broccoli and cauliflower
And strawberries and extra thick double cream and a square of Lindt 70% and a glass of Shiraz.
 
B: sunflower and pumpkin seeds, coffee with cream
L: corgette spaghetti with soya mince, tomato sauce, parmesan
D: probably cauliflower cheese
S: BlackBerrys and cream, nuts.

B yoghurt & berries
L lidl roll with ham,cheese & mayo
D meatballs with 3 coli cheese.
 
B. 1 piece burgen toast & cheddar
L. 1/2 lidl HP roll home-made tuna pâté
D. Baked Haddock in cheese&broccoli sauce, cauliflower rice, strawberries& cream
S. Crispy bacon pieces, 1oz smoked oak applewood cheese
 
B: coffeencream
L: crustless quiche and bought coleslaw plus 2 squares 70%
D: beef mince with red wine and tomato, with cauli and several veg followed by berries and cream.
 
B. White coffee with sweetener.
L. Two toasted slices of LivLife bread with pate.
T. Mince pie, with mug of white tea with sweetener.
S. Lamb and spinach curry with Indian Pilau Cauli Rice (not bad, better than the Mediterranean Cauli Rice). 2 squares of Lindt 90% Cocoa dark chocolate.
S. Green olives.

187ml bottle of Californian Merlot.
