    Spare Ribs

I cooked spare ribs recently and they were really tender and 'fall-off-the-bone' but they really needed a bit more flavour. The last time I ate spare ribs was probably last year and it would have been from the Chinese takeaway! I used to get the 'dry ones not the ones covered in sauce. So how...

    Sugar Free Ice Pops

Unsurprisingly the shops are now all sold out. I was thinking of making some so wondered if anyone else here has made their own? The ones I did find were sold by Tesco in the Disney Frozen boxes. Iceland also do sugar free in a box call Tip Top or something like that - but again everywhere is...

    Greek yoghurt or Greek style?

Is there a difference? I think there is with taste. I had Greek yoghurt and actually enjoyed it given that I am not into yoghurt but the Greek style seems not as nice. Well to me anyway.

    Making sense of blood tests

So after 6 months I'm still checking what raises my blood sugar and what doesn't and I really wanted jacket potato to be on my 'can have' list. So I bit the sugar free bullet and had the first jacket potato in so long and as expected it will not be on that list but I'm trying to make sense of...

Looking after your blood sugar - but getting enough fibre

As it's more problematic to just have the '5 a day' on the fruit and veg, and grains and cereals are off the list, I find it's now becoming an either or situation for me - either look after the blood sugar - or look after the bowel (get enough fibre). I'm now bored with eggs and the same old...

    Cake is just for mugs....

So after the epic quest to conquer baking using ingredients that are new to me, measurements I have never heard of plus of course, a mass of coconut flour and almond flour, which is just in need of using up - I have discovered the joys of mug cakes! And the ones I made last night actually came...

Baking with coconut flour and almond flour

I used to be keen on home baking and still am but since going low carb and trying out new recipes, to be honest I'm fed up with the waste and the taste. I have spent a lot of time trying to find recipes that actually give the weight of ingredients rather than just saying cups (or fractions...

    Progress update and some questions

I've not been posting much lately as last month I was really unwell with tonsillitis and have only recently got over it. At it's worst I was on an icecream, ice cube or McDonalds milkshake diet depending on how bad the pain was, and who was available to fetch my supplies! (I never have...

Cheese straws with coconut or almond flour?

Has anyone got a simple recipe for cheese straws using either coconut or almond flour that they have made? I have googled and the majority of recipes seem to be either US ingredients and amounts or otherwise hidden in Pinterest. I'm trying to build up a new little recipe file at home for things...

    No sugar added drinks

I've been properly unwell. With flu. Even though I had a flu jab a few months ago. I think I'm on the mend as I'm feeling a bit betteer but my throat still feels like it's been disinfected with blow torch. To that end I have been getting thru ice cubes at rate to concern polar bears and as my...

    Tee2 - what's your averages?

If prediabetic members are testing using the Tee2 you probably know it gives averages for 7, 14, 30 and 90 days. I'm coming up to my 5 weeks'ish time of testing so thought I'd post my averages. I have not tested at the same time every day or the same amount of times ever day mainly due to shift...

    Cholesterol question

I've tried to google this but can't seem to find an answer - when I had my well person test (at which the AC1 was done) they also did a cholesterol test - which was 5.17 and HDL 1.70. For the HDL she put 'good' in brackets but I just wondered if the 5.17 is good also, or bad or middling?

    Psyllium?

I feel psilly asking but what does it do? In trying to research low carb recipes for baking I note it is in very many of them. Is it essential? I made some low carb almond flour cookies which tasted lovely but crumled to crumbs. Would psyllium have helped? Does arrowroot do the same thing?

    Which yoghurt?

I'm trying to get to like yoghurt as it appears to be a possible option for taking to work. I'm in the UK so for those who are in the UK - which actual yoghurt do you get? I found ASDA's own brand of full fat strawberry yoghurt seems to be low in carbs but I'm not sure about the sugar. It's a...

    Can you calculate your hba1c?

I've started a spreadsheet with my test readings - ok it's not been going for long but I have a running total average reading - which is currently 6.2 Is there a way to turn that into hba1c or does it need 3 months worth?

Does exercise before any meals put blood sugar up?

Today my fasting BS was 7.9 - prior to the test I had been exercising for about 45mins or so - not heavy exercise - just brisk walking (that got a bit brisker when the hail came down). Since lunch it has dropped back to 6.9 I was wondering if the exercise makes it go up? I've not been testing...

Left over Xmas turkey. What to do with it?

I'm not overly keen on turkey but we have a fair bit left over. Apart from salads, what else could I use it for? I have the carcass in the slow cooker overnight to make soup with.

    Which milk to use?

I love coffee, well cappuccino actually. I drink probably too much although I usually gave decaf. I use semi skimmed milk but should I switch to skimmed? Or something else?

    Post meal test question

I notice that the ideal time to test seems to be 90mins to 2 hours after a meal. If it's longer than 2 hours is it still worth doing or will the ideal moment be gone? A few times I've forgotten the time and it's been more like 3 or even 4 hours.
