I know when I first started testing, my bloods they were all over the place, especially as a I wasn't sure what to eat and when to eat it. As I started to LCHF I found I sometimes didn't feel like eating but my BS were up and down. So I decided to eat 3 meals a day (whether I am hungry or not) - I eat them at the same time everyday where possible, and after about 6 weeks I started to see them come down and stay down. Remember your body is like a machine, you need to treat it right in order to get it working right. So whilst the BS numbers are important, it is equally important to get yourself into a regular routine, one that works for your body.
This may mean that you might have to change the times of when you eat your meals, ie I used to eat my breakfast at around 08:30 when I got to work - but my liver hated this and used to dump glucose into my body so the my BS got higher and higher until I ate. Now I eat my breakfast 30 minutes after I get up and this way I stop for the most part the liver dump. For me this means that I eat my breakfast (Mon/Fri) in the car on the way to work....not ideal really as it limits me to what I can eat. But and its a big but, after doing this for a month or so - I've started to see a great improvement in my fasting results.
Diabetes is an insane disease, everybody is affected by it in different ways. So keep doing whats best for you, try not to worry too much and dont compare your results too much with others - as unfortunately our bodies are all different.
