We just buy from the aging cabinet at the butcher. When I was in, topping up (as y'do), yesterday, they had French Trimmed Prime Rib on offer for NY at £12.49kg down from £15.49kg. I didn't indulge, as it wasn't quite so aged as the lump we had last week, and.......... the freezer remains absolutely full!

(We have pork and lamb for the coming days. Can it all be normal next week please?)

I will join you. I need to drop some pounds that I have gained in lockdown. (Too much cream I fear).
I am having an Indian take away tonight it will be mainly meat with an onion bhaji. (Traditional new years eve birthday tea). Then back to carni and intermittent fasting for 2021.

Yes, the butter’s for aging. It looks fabulous.

Just so happens I have an aged beef rib roast about to go into the oven for reverse searing. Looks amazing. And I may have slipped into Waitrose while it was still dark this morning and picked up a half shoulder of lamb.

The Thames looked beautiful but it was freezing - it’s taken me ages to warm back up again and I’ll have to do a lot of self persuasion to venture out again!

Reverse sear worked out perfectly for the lunch of bone-in rib roast. Some left for later too.

I’ll join in too. I’ve been toying with the idea far too long, now it’s time to take the plunge.

It’s just dawned on me that wine isn’t made of meat! Looks like I’ll be doing Dry January too. My lucky liver.

Don’t skimp on the salt and drink plenty of water. A magnesium supplement can help too, if you don’t already take one. I get more ‘bunged up’ when I eat veg!

yes, i agree with GG.
Drink significantly more. and wait and see how/when your body adjusts.

Every different food is absorbed in a different place along the digestive tract.
Water is absorbed from the colon, which means that if you are at all dehydrated (and many people haven't got a clue how habitually dehydrated they are) then water is pulled out of the food waste and into the body, leaving hard dry stools.
In that situation, fibre just forces the body to leave some water in the stools, while the body doesn't get the water it needs, which addresses the symptom (constipation) while failing to address the cause (dehydration).

I have a question about protein I’m hoping you experienced folk can answer:
I’ve read that too much protein can be damaging to kidneys, but the carni woe is just protein and fat so how do I ensure I’m not overloading with protein?
I had a nephrectomy in 2017, remaining kidney is healthy but I’m nervous about adding extra strain on it.
Obviously I’ll choose fatty cuts of meat and add butter but I still worry that for satiety I’ll pig out on the protein.

For me coffee is an honorary animal food especially with a nice dollop of double cream.. just on my third of the day!

As for the protein thing I'm pretty sure that protein is not harmful to healthy kidneys. LCHF diets are often recommended by Dr Fung who is after all a nephrologist so should know his onions..

Tea and coffee definitely allowed. I’ll also be allowing onions - will never give those up and as they’re always part of a proper meal rather than a ‘treat’, then that’s fine.

Can’t answer your protein question - eating loads if it isn’t an issue for me and there are plenty of doctors etc advocating a carnivore way of eating. Guess you should get some specialist advice given your medical history - seems that too much protein is only as issue if you have kidney disease.

Perhaps look at the meats/fish that are less protein dense in the meantime?

my carni protein intake is governed by a number of things.
Too much protein and I feel claggy and meh (both are technical terms, you understand). My urine goes v dark as my body eliminates the excess protein as quickly as it can via the kidneys, and my digestion slows down and my stomach feels full for ages after meals. It didn’t take long for me to work out that huge protein meals and intermittent fasting while carni doesn’t work for me (although I enjoy both occasionally) I also like to vary my proteins. Beef all the time would end up revolting me. So I eat lamb, pork, beef, duck, chicken, turkey, salmon, herring, mackerel, bassa, hake, haddock, and so on, with spices, sauces and seasonings to add further variety. Also a large variety of cheeses, goatsmilk yog and kefir.

Once I had identified the claggy heavy meh feeling for what it was, I switched to smaller, lighter meals for a while, such as a side plate of roll mop nibbles, ham rollitos and slices of jaalsberg, stilton and brie. With some butter to reach the keto macro. Delicious, endlessly varied and much more comfortable for my body.

i do much better eating 1 main meal a day and then 1 or even 2 smaller meals. And my body likes keto macros of fat to protein. This means I can feel comfortably sated on fat without feeling meh on too much protein.

In your situation, I would tread a middle line. No point worriting too much about your kidney, but equallybeing careful not to overload it with huge portions of anything at one time.

So I suggest that you experiment and see what works for you, and please don’t assume that large protein feasts are necessary in order to eat deliciously carni.

oh, and I still happily consider that small amounts of plant foods can be included while staying ‘carni’. For me, these include herbs, spices, seasonings, high cocoa content choc, herb teas and (v occasionally) nuts. If I didn’t have the taste and texture variations that these plant items offer, I would probably abandon carni within a few days due to boredom (which would then cause all sorts of aggro since my body doesn’t tolerate carbs or veg in any quantity). So I eat around 97% carni, and the plant stuff is no more than garnish.

If coffee didn’t drive my bp into the stratosphere, I would be drinking gallons of it. With cream.

I have found that if anything alcohol lowers my BG....and there are comparatively few carbs in wine anyway.....

OK all confession time..

Have slipped a bit over the past few months.. gained a few excess pounds and had an increase in HbA1c (although quite small) .

Battening down the hatches for January (and hopefully evermore) into a meatier 2021.

Anyone else returning to the carni fold after a mild flirtation with "normality"?
Don't forget "we" are hyper sensitive to our measurements, others >99.999 I would say, make in my view an assumption on health status. A HbA1c of 29 is mind blowing. On the plus side you know there is a relationship between your weight and your A1c, but you have so much in hand. I am just going to not be so greedy this year. I may still have seconds, but I am setting a rule that, I should feel able to sprint within 30 minutes of my last bite.

I think I might join you in 2021. I need to loose some of the weight I put back on after diagnosis.

This Christmas present might help, Iberico acorn fed ham shoulder. It’s delicious.
