Crisps

I think so. Is there an alternative?

Kale allegedly but potato crisps will be about 50% carb whatever the variety..
Veg ones not a lot better as root veg is carby too (about 45% ) I think..

Pork scratchings are better for the crunch but don't fit your "low fat" although why are you going for low fat anyway?

These are a bit meh but ok... although horrendously expensive

I had a heart attack a few weeks ago. They said I need to cut down on fat intake and also they said I am now T2 diabetic.
I'm trying to sort me sandwich box out with alternatives to the stuff I used to take to work. I'm getting there slowly but atm normal crisps are out and I'm looking for a replacement.

You'd probably do better avoiding things like crisps that are cooked in seed oils rather than "fat" per se..
Cold meats, cheese etc far more nutritious and filling than the carby stuff that won't help your blood sugars (in my humble opinion).
 
Courgettes, finely sliced, preferably with a mandolin. Spray with a little oil, sprinkle on finely grated hard cheese such as parmesan. Cook in a low oven until crisp. I found they didn't keep overnight. Google keto crisps or keto chips.

Personally, I love kale crisps (with parmesan and garlic) and dehydrated/baked onion rings smeared with curry paste and a dusting of something like powdered hempseed.
They take a bit of prep, but they are actually nicer than bought crisps.

I left a couple out overnight to see how they fared. Ate the rest
 
When I attended the talk given by @Debandez, I made some nibbles out of gouda. They went down a storm and the attendees went home with the leftovers.

They certainly did! And you even did some for my newly diagnosed BIL. Seeing him Friday for a couple of appointments then dinner at ours. His nibbles are waiting for him.(miraculously!!!).

Hope they are still crunchy. If not chuck them in the oven for a quick blast

@ardvark, you can use egg plant (aubergines if your posh), instead of courgettes.
 
Me? Common as muck. Just looking for an alternative that I can buy from the likes of Tesco.
