I had a heart attack a few weeks ago. They said I need to cut down on fat intake and also they said I am now T2 diabetic.
I'm trying to sort me sandwich box out with alternatives to the stuff I used to take to work. I'm getting there slowly but atm normal crisps are out and I'm looking for a replacement.
Courgettes, finely sliced, preferably with a mandolin. Spray with a little oil, sprinkle on finely grated hard cheese such as parmesan. Cook in a low oven until crisp. I found they didn't keep overnight. Google keto crisps or keto chips.
I left a couple out overnight to see how they fared. Ate the restDidn’t keep overnight, or didn’t last overnight?
Personally, I love kale crisps (with parmesan and garlic) and dehydrated/baked onion rings smeared with curry paste and a dusting of something like powdered hempseed.
They take a bit of prep, but they are actually nicer than bought crisps.

They certainly did! And you even did some for my newly diagnosed BIL. Seeing him Friday for a couple of appointments then dinner at ours. His nibbles are waiting for him.(miraculously!!!).When I attended the talk given by @Debandez, I made some nibbles out of gouda. They went down a storm and the attendees went home with the leftovers.

Aubergine if you’re British not Aussie or American. Lots here would have no idea what an eggplant is and have some very odd visuals!egg plant (aubergines if your posh)
