I just read that eggplant is very low in carbs
A: Eggplant is a great food to help you lose weight. Eggplant is a low-carb, nutrient-dense, calorie-poor food, meaning that it contains high levels of nutrients but not a lot of calories or carbohydrates. One cup of eggplant contains only eight grams of carbohydrates, two of those coming from fiber
I will try it for breakfast with coconut butter and Marmite instead rice paper.

I have to ask, how will you prepare the eggplant?
I have one a week, mostly in a curry sauce as I love 'em. :)

I also sometimes use them as a replacement for Pasta sheets in lasagne. My favourite is to make Baba Ganoush ( middle eastern aubergine dip). An Indian friend told me to roast aubergines then to discard the outside and just add the flesh to a curry - gives a much more robust texture to meat/ veg curries without any bitterness

Eggplant parmigiana with grilled slices with buffalo mozzarella (or normal mozzarella)
Grilled slices with a sauce made with oil, garlic, hot pepper and parsley. or dijom moutarde

Grilled slices with tomatoes and oregano
Baked with olive oil, garlic and basil and some cherry tomaoes - served hot

I love aubergine/egg plant in curries, stews, ratatouille, any tomato/mince dish and moussaka.
Don't think I have a favourite dish, because the think I love about them is the smooth velvety texture they add, and that comes through with all the dishes.

Aubergines used to be bitter but no longer as this has been bred out of them. So no need to waste the outside.

Ooh, I must be doing something wrong!! Whenever I have cooked and ate them they just remind me of fried slugs!!
Can't eat the skin so have stopped buying them now..

I like them sliced and grilled with hallumi and mushrooms for brunch - I also just cube them up with mushrooms, spinach some half cherry tomatoes fry them all together and throw in some cubed feta at the end

I have salted and unsalted attempts with garlic in cuts to try and to get me to like.. still remind me of slugs when eating. Something about the texture. I got to have done something different (wrong) to everyone else-lol!!

Do you salt them first? Whenever I have tried them they seem to be a bit mushy.
Never salt them it's a fallacy- salting them will draw some moisture out that's about it- when you fry them they suck up the oil but when they are ready they throw all that oil back into the pan, if you take them out then they will be perfect hold their shape and not be too mushy
