Oh, that sounds lovely...Try not to fry them in seed / vegetable oil, but other than that - whatever you like. I'm currently using silicon moulds in an air fryer with grated cheese and avocado oil (with pepper and salt, which lets the egg cook at slightly lower temp).
You don't have to go much further back to a time when the recommendation was "two a day if you are well, four if you are unwell"..I’ve had diabetes long enough to remember a time when 3 a week would get you a slap on the hand , so nowadays I eat them anyway I can even raw with a bit of peppered milk, my fav is a bake bean omelette or poached with a lovely runny yolk
I used to struggle with eggs too many years ago, had to be overcooked however they were done, love them now but one thing I still can’t do is have recognisable egg and chicken on the same plate as in a salad or a chicken omelette heheI've never been fond of eggs since as a small child many more yeas ago than I can rememeber, I used to watch my dad slurping down glasses full of raw eggs....So I prefer mine well disguised - e.g. baked with nut meal/flour etc, as muffins, sponge pud, "bread", etc - so another vote for whatever way takes your fancy

Dippy eggs are great with asparagus too, if I get the really fine, thin asparagus tips from Tesco when in season I just use eat it raw (the asparagus not the egg)Now that’s a brilliant idea.
