Yes, I use either broccoli or cauliflower rice all the time now, I have got used to it and can make it a little tastier than you might first imagine. I also cheat a little with the sauce and pick out a low carb jar off the shelf. Hi Applemalc and welcome to the forum.
First accompaniments for curry, I always do cauliflower rice, you can just grate a fresh cauliflower or buy prepacked. I find it’s best stir fried. You can also buy low carb pittas on Amazon, I grill those with some coriander and garlic butter on one side, to make an acceptable alternative to naan bread.
As for the curry itself, as you make your own you can be in control of what goes into it. To reduce the carbohydrate content you need to obviously avoid sugar, high carb fruits (I know some people put fruit in curry) and flour for thickening.

I make something like a mushroom or spinach bhaji to go with my curries - basically I accompany curry with more curry instead of a cheap filler like rice.
