Hi.
So I'm trying keto. I've been recommended glucomannan to thicken soups but it's a horrible grey sludge. No matter how I make it. Any ideas on a low carb alternative? Thanks
 
For keto soup, I just use 1/2 cauliflower, an onion, 2 garlic cloves, chicken and vegetable stock (6 cups) as a base to any soup. If you saute the vegetables in butter and olive oil before adding the stock, it adds flavour. After cooking for 30 minutes, blend with a soup hand blender to make thick.
 
I bought some gelatine for this purpose but I haven’t tried it yet. I also use red lentils in a tomato-based stew, maybe half a mug or so. Spread over the 6 or so portions I usually end up with I don’t find this spikes me.

Gelatine won’t work in hot food it only sets when it goes cold even warming it will turn it back to liquid. Try agar agar as once it’s gone cold and you heat it up again it is heat stable although you need to break the sauce up with a blender.
 
You can cook veg into the liquid and then blend to make a lovely thick soup.
If you want chunks of veg, just take out half the veg, liquidise the rest, and return the chunks to it.

Some veg lend themselves to this more than others.
I find mushrooms thicken gravy beautifully, while adding fab flavour.
And tomato, onion, broccoli and cauliflower thicken soups.
Aubergine gives a beautifully silky smooth texture.
Peas give a good 'body'.

It is mainly a question of trial and error.

I used to regularly make soup as part of my job, back in college.
It honed my soup making skills, but the family were always complaining that I used up all their veg in soup.

Haha! It used to make me laugh, because there I was, going through their fridge, getting rid of all the tired old veg for them, to prevent waste - choosing the ones that were elderly and desperately needed finishing up. And they were whinging because I had deprived them of veg they were going to eat for days, apparently. :D
